Description
Eccentric beers and shirts, this is the winning combo offered by ZYTHOLOGIST. Equipped with their colorful attire, our two Crafters produce modern beers inspired by their many travels. As their outfit indicates, they founded their micro-brewery on the Hawaiian theme.​

A few years ago, Nicolas and Bruno's friendship was borned during beer tastings where all their senses were used. This beverage became quickly a common passion. This is why they started studies of zythology and experimentation with their first brews. Always thirsty for knowledge, our 2 Zythologist's began micro-brewers studies.

Small whitish rim over faintly veiled metallic red beer. End of bottle solid deposit. Faint fruitnose, mainly cherries. Bit floormop Bretts? Tonka beans (with classic speculoos and "Clan" pipe tobacco) foremost. Dark cherries following. The Tonka beans lend a slightly perfumy smoked flavour gradually. Light body, soft carbonation, acidburn and -thinning. More perfumey than really complex, but still a pleasing fruitsour.

Very small head, soon reduced to pinkish rim over rosy, pale copper beer, lively carbonated. Sourish nose with red fruit, rhubarb. Bit lemony, lactic acid, wild yeasts. Demure fruitflavours with rather mild acidity. Again lemony, unripe raspberry or ditto strawberry. Finish has something leafy, fruitbushes, hibiscus tea. Tart, lipsmacking acidity but not very sharp. Acidthinning and (light) -burn. Interesting beer. Txs to Stef!

SLOW GUSHER ALERT!
Clear yellow blond beer, small creamy white head, a little stable, non adhesive. Aroma: fruity start, vanilla notes, musty, a bit stale, a little chemical, very funky. MF: lively carbon, medium body. Taste: sweet start, chemical touch, soft acidity, a little fruity. Aftertaste: dry, bitter, a bit chemical, funky, clay, meh.

Aroma is STRONG coocnut and mango. drowns anything else. also pineapple like notes. Flavor is less sweet than aroma, on par with fresh pineapple juice. not much beer flavor or yeast flavor. very dry. Not sure what this is about, but it's not really very interesting

Bottle from Geers. Batch #070/276. Cloudy ochre, thin, off-white head. Aroma of pineapple juice, mango, coconut cream, yellow curry, peach, sour cream. Taste has sweet-sour pineapple & mango mixed with coconut cream & yoghurt into a 'spicy curry sauce' profile. Tart finish of stone fruit, mango, soft peppery hops and curry spices. Medium body, creamy texture, average carbonation. Daring attempt, but adequately balanced so it never becomes weird. This is what 'Pastry Sour' needs to be.

Clear gold blond beer, small creamy white head, unstable, a bit adhesive. Aroma: nice, quite some tropical fruits, juicy, peaches, mango, very nice! MF: ok carbon, medium body. Taste: nice, very fruity, hoppy, lots of peaches, mango, white grapes, very nice beer, good bitterness, dry finish, lovely beer!

Can, 0.33l. Aroma of ripe tropical fruit, stone fruit, flowers and vanilla. Pours cloudy golden color with large soapy off-white head, good lacing and sparkling appearance. Taste starts refreshing citrusy, stone and tropical fruity, following is biscuity with vanilla note, mouthfeel is smooth and mild spicy, while finish is average bitter. Medium body, creamy texture and lively carbonation in palate. Hawaiian hoppy desert…

Bottle. Large gusher. Color: Hazy golden, large white head. Aroma: Saison yeast, subtle spicy, fruity grape and stone fruit. Taste: Vinuous, fruity plum, pretty spicy, peppery hints, Saison yeast, oak wood notes. Dry-ish mouthfeel. Medium body, below average carbonation. Over moderate sweet, light bitterness and sourness. Interesting.

33cl can from Rob the Gourmets’ Market in Brussels. F: big, white, long lasting. C: pale gold, hazy. A: a lot of citrus, pineapple, mango, lemon, spicy. T: medium malty base, grapefruits, pineapple, floral, lemongrass, soft carbonation, nice balanced long lasting bitterness, good one, enjoyed.
