It was a struggle to purchase this beer, but the nice people at Total Wine in Ft. Worth held onto the last bottle they had until I could get there over the Thanksgiving weekend. I lift the cork and get absolutely no pop from it, not a good sign. But there does appear to be some carbonation working up from the bottom. The view is a chocolate brown body with just a touch of bubbles on the top. The nose is vinous and sweet, a little unexpected. I have a drink. It is a subdued sensation, an old bottle perhaps? The taste is decent, figs, caramel, lightly chocolate, some wheat bread. The basics are there, I am unsure if I am having a good sampling or not.

Super dark brown; smallish but stubborn head of tannish foam. With lacing. Smells roasty, abundant aromas of caramel malt and dark pitted fruit, a wee bit of vanilla. Leather. Taste matches but the vanilla is more upfront. Alcohol hidden so well which goes well with the smooth as silk mouthfeel.
Call me weird but I reckon this is superior to the Chimay Blue. such a nice drop.

From a 75 cl bottle shared at home. Pors a hazy cola brown with an ecru head. Caramel aroma. Flavors of toffee. Smooth, sweet finih=sh.

22 oz. bottle purchased at Winooski Beverage wear house. Dark brown, nearly black color with lasting head retention. Aroma is dark malts, Belgian yeast and toasted bread.
The flavor is mostly the same as the aroma. Yeast up front with candy sugar blast that lingers throughout the sip. Hints of chocolate and tobacco. Light notes of ABV, still pretty drinkable. Bottle is at least two years old and still has a nice level of carbonation, lightly creamy. Classic example of the style.

Clear deep orange beer, creamy off-white head, pretty stable, bit adhesive. Aroma: very fruity, heavy alcohol notes, I'm thinking cognac or whisky maybe? Vanilla notes, some overripe fruits, hint of citrus. MF: quite some carbon, medium to full body. Taste: some citrus, grapefruit, pretty bitter, cognac again, yeast, grapefruit peel, lychee, could there be some Sorachi Ace, or Nelson Sauvin? And I also get some artificial bretta (yeast package). Aftertaste: lots of grapefruit, little sour, lemon peel, alcohol burn in the end. I'm guessing this has been barrel aged on some sort of spirit cask. Just can't put my finger on which one.

Clear dark brown to purple beer, very creamy beige head, stable, adhesive. Aroma: quite some caramel, chocolate, sugary, sweet malts, dried fruits. MF: ok carbon, medium to full body. Taste: bit sweet, malty, some chocolate, pretty bitter hops, more dark chocolate, bit chemical, some overripe fruits. Aftertaste: again chocolate, roasted malts, some mocha, dried fruits, ripe banana, bitter hops and even more chocolate. Very decent beer!

750 ml bottle into chalice; no bottle dating and unknown cork coding. Pours moderately cloudy dark reddish brown color with a 1 finger dense khaki head with good retention, that reduces to a small cap that lingers. Spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big raisin, apple, pear, plum, molasses, toast, dark candi sugar, brown bread, light chocolate, clove, herbal, and yeast earthiness. Very nice aromas with good balance and complexity of malt and fruity/spicy yeast notes; with good strength. Taste of raisin, apple, plum, pear, molasses, toast, dark candi sugar, brown bread, light chocolate, clove, light pepper, herbal, and yeast earthiness. Lingering notes of dark and light fruits, molasses, toast, dark candi sugar, brown bread, light chocolate, clove, pepper, herbal, and yeast earthiness on the finish for a while. Very nice balance and complexity of malt and fruity/spicy yeast ester flavors; with a good malt/spiciness balance and zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a slick and slightly syrupy mouthfeel that is nice. Alcohol is very well hidden with only a small warming present after the finish. Overall this is an excellent quadrupel style. All around great balance and complexity of dark malt and fruity/spicy yeast flavors; and quite smooth to sip on for the big ABV. A very enjoyable offering.

Bomber bottle. Pours a dark brown with small beige head that quickly diminishes to nothing. The aroma is apricot, citrus, and caramel. Medium mouthfeel with a dry fruit and licorice. Alcohol present but not too overpowering, a good quad from De Proef.

Bottle @ home. Hazy brown appearance with a light brown head. Strong candy sugar, somewhat boozy, brown sugar, belgian ale nose. Very candy sugary, dark belgian, boozy flavor. Strong, sugary, boozy finish. I really can’t stand this one.

Bottle at the World Beer Festival - Richmond Brewers Party on 06/11/2010. Dark brown body with a large creamy tan had that persists with belgian lacing. Sweet malt, belgian spice and molasses aroma. sweet belgian spice flavor with light molasses and caramel. Medium full body with moderately high carbonation.
