Description
Our orchard is planted on a peaceful hilltop as part of a harmonious ecosystem that relies on diversity and fertility as its foundation. South Hill Cider produces ciders with individuality, quality, and elegance reflecting the terroir of our beautiful Finger Lakes region.
Steve Selin, the cidermaker, apple picker, and community orchardist has been bottling his own cider since 2004. Collaborating with neighbors to help maintain and reclaim wild trees and forgotten orchards for use in cider making has been a labor of love for years ~ see the Fingerlakes Apple Tree Project. The apples from these trees, plus bittersweet and heirloom apples from other small orchards, enable us to give every bottle of cider the solid foundation needed for world-class ciders.
Living just four miles south of the Ithaca Commons, Steve and his family have been collaborating with an adjoining landowner to allow Steve to plow these fallow fields and to plant an orchard of cider apples. This land, being so close to Downtown Ithaca, is under intense development pressure. In 2014 Steve helped the landowner to protect his land with a Conservation Easement, which will protect the land from subdivision and development in perpetuity. The land adjoins 182 acres of Finger Lakes Land Trust and Cornell Preserves and is located on the Finger Lakes Trail.

Bottle from their winter cider club. It's all about that free shipping. Mojito glass @home. Low fizz, murky, medium, pissy yellow pour. Smells of warm lemon honey, fresh pressed cider & slight hay funk. Dusty, browned apple sweetness, lemon confit, pear softness, over-ripe mango. Juicy. Late to the party bitter seed note adds a speed bump to the seemingly unfermented, honey-like flavor. Needed a little more backbone. Too sugary as is. Murky. Would have appreciated way more bubbles. This was quite limp & a bit of a chore. Their prior keeve was better, but this was still fun.

Bottle from their cider club. Pint glass @home. Refractive, pale gold pour; mostly still. Funky muscadines, earthy apples, yeast, subtle flora & steel. Creamy chardonnay, quick acid, wax, apricots & cream; banana. Low tart. Forever lingering. Low to moderate carbonation, softly boozy. Acid reflux time. Simple & effective. Good.

Original rate: 9/30/22, 2.8 Second rate: 3/17/24 3.4 Same vintage, new delivery from the producer. Same look. Still estery but not obvious banana on the nose. Bittersweet, sharper, obvious Dabinett, not enough Baldwin. Thinner texture, more iron-y. A little dusty on the end. Lingering minerally note. Still intentionally flat. Great acid, low tart. Better. Bottle from their cider club. Goblet @home. Slightly dusty, not quite hazy pour. Bittersweet apple, banana, salt, Bittersweet, creamy, doughy, minerally, floral, so damn yeasty. Disappointed, because I usually love both these apples. I'm tired of whatever this is. Okay. Tough in a 750.

Bottle from South Hill's bottle club. Goblet. Really deep, filtered, bright burgundy red. Rich, too sweet, fruity wine nose. Taste is fruity Lambrusco, sharp apples, skin, sulftites, yeast, touch of rot, very dry finish. Very simple favor, medium carb, okay aby. Meh.

Really wanted a perry rate, but honesty got the better of me. 750ml bottle from their bottle club. Goblet @home. Cloudy, pale straw, still. Smell is sour, milky, fruity, peppery. Sweet n sour. Yeasty, trash home brew, vinegar, lemon, Sidra-esque, not tart enough, dust. Nasty super yeast finish. Carbed enough, but ugh, it's sloppy.

Bottle bomb from their cider club. Goblet @home. Caught most of the spillage over the sink. Still drinks pretty good. Hazy orange amber, very active. Very minerally, earthy, browned apple nose. Juicy & bittersweet upfront, 0% sugar but very fruity/macerated flavor. Minerally, slight lemon, dusty & astringent, borderline creamy. Okay to good.

Bottle from their online club. A few months in the basement, a month in the fridge. Stemless wineglass @home. Fizz white head, bright, clear, 14k gold. White grape, pear, leafy plants, plastic, some kind of berry, residual yeasties. Crisp, bitter-tart. Leafy, bitter lettuce, sharp green grapes, very minerally, cava, lemon, moderate stone-fruit bright sour closer to the end, very tannic skin & iron finish. Accurately off-dry. Tough like a typical South Hill blend. Very fizzy, mostly thin, strong acid, abv on point. Good batch.

Bottle from their online shop. 20% off cases & free shipping! Tulip @home in the Ratebeer chats. Clear, still, dark Lipton tea. Dried leaves, autumn, woody, earth, un-fermented apple, big acidity. Biting, bittersweet, major lemon-tea, red apple peel, Lemonhead sweetness, caramel, oxidation, long-draw popsicle with a grassy finish. Obviously slick, but the body doesn't hold. It sort of breaks up & gets watery on the real finish. Still bittersweet, lemony-sharp, but no solidity on it.

Bottle from their cider club. Duvel glass @home. Ratebeer chats edition. Smoke rising from the neck. Sizzling, clear, amber gold. Juicy, leafy, cranberry apple juice box. Tart, reminiscent of red eating apples. Lemon honey, slight earth, mint, bitter aspirin/black tea finish. Missing that third note. Good.

Bottle from their cider club @home. NB goblet. Golden Heineken pour, quick-hitting head. Smell is earthy, bitter, yeasty, green banana, subtle sharpness keeping it interesting. Initial splash of acid & tartness, but overall creamy, very bitter, earthy, calcified, salt, light sweetness, more hidden acid, & dust on the trail. Very soft, but thorough carbonation, lots of multivitamin texture that isn't my fav, abv is a touch big, but warming. Solid to good.
