After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.
We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

Smell of fruit. Ruby colour, no head. Aroma of fruit, grass, hops. Flat carbon. Sweet with some bitterness.

Tap at Fine Mousse. Mild smell of hops. Golden colour, white head. Aroma of hops, malt, grass. Lively carbon. Pure flavours.

Bottle in garden, 22nd July 16. Pours black, Aroma is malt, chocolate. Taste is more malt forward, caramel, some bitterness. More of a light, hoppy stout. Not bad.

Dark amber color, small off-wite head. Aroma has riped fruits and some chocolate. Medium-bodied. Riped fruits, sweetish chocolaty notes, light alcohol. Not really "brown ale" but something lke abbey dubbel. Ok.

Mother Kelly’s. Keg. Light haze on this deep gold beer, thin pale cream colour head. Palate is airy, semi dry and has decent fine carbonation. Smooth malts, feeling a little viscous, touch of malt cream. Light and sweet banana esters blend well with sweetish floralness. Light spice. Light finish. Comes together well. Triple’s are tricky old beast but this one is smooth and drinkable.

[ As Volcelest Barrique ].Clear dark black brown color with a small, frothy - fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, roasted, chocolate, dark malt, wood, oak. Flavor is light heavy sweet and moderate bitter with a long duration, alcohol, wood, chocolate, dark malt, oak. Body is medium, texture is oily, carbonation is soft. [20160123]
