Description
Our brasserie, Domaine Brassicole Palazzu, is located in the heart of Cap Corse. This house, built in 1877, is what we call an American house, one of those sumptuous villas endemic to Cap Corse and built at the end of the 19th century by islanders who left to do business in the United States.

Paul Saladini and Florent Vivarelli are childhood friends. The first is a lawyer and manages property. The second deals with the commercial development of SODISCO, a family business that distributes wines, spirits and Champagnes. These two have been wanting to start a business together for a while and it turns out that the dynamism of the brewing market does not pass under their radar of discerning palates.

We can especially talk about the pugnacity of the two founders and the energy of the brewery operator, Thibaut Real, who wets the jersey so as not to miss the season. But it is also a question of temperament, resourcefulness and mutual aid on an island heavily impacted by logistical slowdowns in times of crisis.

In its current configuration, the brewery has a maximum annual capacity of 800hl. It is equipped with a conditioning system (2000 bottles / h), 6 cylindrical-conical isobaric 10hl tanks, an efficient thermoregulation system and enough room to base its development in the coming years.

Bottle: Poured a yellow color ale with a medium size white foamy head with OK retention and some lacing. Aroma of wheat malt with light dry herbal notes. Taste is also a mix of wheat malt with dry floral notes and light grainy notes. Body is average for style with good carbonation. Average witbier and floral notes provides weird spice notes.

Bottle at home in Hackney - picked up from Nicolas Kew. Pours clear, yellow-gold with a bubbly, fading white head. Light-medium sweet flavour with some floral notes, lemon peel, a little soft grassy bitterness, citrus zesty, pale biscuits. Light bodied with active, spritzy carboantion. Alright balance in the finish, a little lime peel, dried pale biscuits, lemon grass, elderflower. Not bad, drinkable enough.

330 ml bottle. Pours a hazy brown with huge head. Aromas of sweet baking dough and soapy camomile. Flavors of nutty dough and camomile.

330 ml bottle. Pours a dull gold with full head. Aromas of floral hops, dried fruit and toasted malts. Flavors of fruity hibiscus and crackery malts.

Yellowish cream head over veiled chestnut (apt) beer. "Aged", biscuity nose - typical for chestnutflour addition - even a bit portwine-like; bit of milkchocolate. Bitterish with a light sourish taint. Again milkchocolate, old cookies. Bit of a 'mossy' flavour and a long, woody, drier aftertaste. Quite slick, medium bodied, not very carbonated. Weird, not bad, not special. Thanks to Stef!
