Hey! We're Kit and Matt. We set up Wye Valley Meadery in 2018 and have been producing a growing range of delicious sparkling and traditional meads ever since. Our experimentation led us to create some beer / mead hybrids and we quickly realised this required further investigation.

Bottle sample courtesy of Fergus, cheers! Deep golden amber colour, afew bubbles on top which dissipate away and aroma of honey, toffee, wood, herb, spice, rum. Taste is mellow, honey with caramel, herbal & woody hints, some booze with rum notes. Smooth mouthfeel, oily full bodied, low carbonation, drying warming finish. Very sippable.

Bottle at home pciekd up from HOTM. A deep golden amber orange coloured pour with no head. Thicc. Aroma is intense caramel honey, brown sugars, raisin, apple, toffee. Really rich earthy honey. Flavour is composed of intense golden honey, earthy raw honey, caramel, brown sugars, Mellow barrel character, rum and raisin, gentle warming alcohol. Drinks super easy for 18%. Palate is super slick , medium sweet, still. , Lingering hawthorn.

Bottle shared by Grumbo. Aroma is dark fruits, malty, fruity, bready, chocolate and ashy. Mixture of sweetness and bitterness on the taste. A roasted bitterness prominent at the finish.

375ml bottle from HOTM. Deep red colour, pink foam head and aroma of blackberry, honey, citrusy hops. Taste is sweet, juicy blackberry, honey, with some tartness and citric hop bitterness. Medium bodied, soft carbonation, lingering sweet drying with honey berry & hop at the finish. Nicely drinkable.

330ml bottle [courtesy of Grumbo - cheers Graham!]. Quasi black colour with small to average, creamy, moderately lasting, minimally lacing, dark tan head. Roasty, chocolately, minimally smoky, dark malty aroma, hints of coffee, burnt coffee, dark chocolate, a touch of smoked ham; weak, fruity overtones with a touch of plum butter and bramble jelly, blackcurrant, a touch of dark honey as well. Taste is roasty, slightly chocolately and minimally smoky, dark malty, minimally caramel malty, slightly bitter hoppy, notes of dark chocolate, dry cocoa, some coffee, smoked ham, a touch of iron; increase of sweetness (dark honey) and a minimally fruity touch of plum, bacon-wrapped plum, bramble in the last third, minimally metallic overtones. Slightly oily texture, smooth and soft, simultaneously minimally repellent palate, medium, dense, mildly prickly carbonation. Mild smokiness, nice fruity aspects, quite complex - a late bloomer in a sense - pretty decent.
