Description
Based in Edmonton, AB, we’ve set up our production brewery to be 100% exclusive to mixed fermentation sour and wild beers. Our initial barrel investment allows us to guarantee that all of our beers spend time on oak during the maturation period before they are released. Additionally, all of our beers go through a minimum four stage fermentation lifecycle: initial primary fermentation, secondary fermentation on oak, a homogenizing fermentation after blending, and finally a fourth fermentation in bottle to produce the tight, silky effervescence characteristic of these unique beer styles. Some releases will also include a fifth fermentation (fruited blends) between the other fermentation steps.

Cloudy amber orange beer, small creamy white head, unstable, non adhesive. Aroma: some vinegar, fruity, peaches, tannins, funky, brett notes. MF: ok carbon, medium body. Taste: very sourish, vinegar, acidic, lemony, fruity, peaches, more fruits. Nice! Aftertaste: a hint of vinegar still, very fruity, dry, lemony, some tannins, a little bitter, dry finish, nice stuff!

Superficial festival rating @ Rebel Beer Fest 2024. Slightly unclear reddish golden body without any head. Acidic aroma of lemon and grapefruit. Really sour taste, vinegar, lemon, grapefruit. Medium body with acidic aftertaste as well. Rather one-dimensional on the acidic side, not able to detect any grape flavors or anything vinous. Refreshing in smaller amounts.

Superficial festival rating @ Rebel Beer Fest 2024. Unclear pink body with almost no head. Acidic aroma, lemon, sour fruit, unripe white berries. Taste is quite acidic as well with lemon, vinegar, funky Brett and a little hint of yoghurt. Very acidic, but still nice.

Medium, lightly amberish tinted head, irregular, over veiled orange beer. Floral, and a fishy nose, really as canned anchovy. DMS again?? Anchovies less prominent in the flavour, if still perceptible. Main taste is lemony, rhubarb sour. Prickly Pear?? I'd rather say unripe gooseberry or such. Warming up, the anchovies diminish and the floral aroma returns as roses - the acidity remaining throughout. Ultra tart, yet certain (soapy?) slickness. Lipsmacking acidity, acidburn and -thinning. "Remarkable" doesn't come near. Both tasters swore 'anchovies' in the nose. It does diminish the pleasure somewhat.

Fast disappearing cream tinted head over hazy orange beer. Nice inviting fruity nose with peach, citrus, raspberry, melon, nectarine etc. Lactic acid. Lactic acid, citric acid, Bretts all over the place (the right ones!). Very tart, lemony, unripe stonefruit. Lipsmacking acidity, sharp acidburn, acidthinning, good carbonation. Not for the fainthearted. But once more, a very noteworthy brewery to explore.

Keg at Mikkeller Exmouth Market, 14/02/24. Deep golden pour topped with an off white head. Nose is funk, lambic-esque, green berry must, damp alleyway, oak, hint of dry rot. Taste comprises barnyard notes, lemon peel, herb, green berry stones, funk, pissy, damp cloth, hay bale. Medium bodied, fine carbonation, semi drying close with a well balanced but sharp edged acidic rise. Solid sour edged saison, well balanced and nuanced.

Sample from bottle at Bistro Zizkov, Östersund. Funky tropic aroma. Peach colour. Very mature type of sour. Pleasant drinking, even if it turned the stomach a bit.

Bottle. Pours a slightly hazy golden color with a small white head. Has a fruity sour blood orange aroma. Fruity sour tart bretty blood orange flavor. Has a fruity sour tart bretty blood orange finish.

750ml @ Black Christmas 2023 at Heritage Hall. Appearance: hazy golden with a white head. Aroma: sardines in olive oil, wtf? Taste: along the same lines, moderately acidic, some fruitiness. Overall: there is definitely something wrong with this one.
