Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle shared by Garret at Salud, thanks! Cloudy yellow color, thick white head with good retention and solid lacing. Taste is sour, peppery barnyard with dusty fruit. Very tasty.

Poured from a bottle. Aroma has quite a bit of cherry character with some nice note of oak barrels and wine tannins. Some lighter grape and berry notes. Light raisin, fig and prune as well. Background malt notes of caramel, toffee and toasted bread. Pours a somewhat clear, amber brown with a fairly large, medium thick, tan head with all right retention as it falls into itself and lingers on the edges. Light lacing and medium sized legs. Flavor has a light to medium light tartness to it with some sour cherry and acidic oak and grape skin tannins to it. Moderate cherry flavors with some light berry notes. Moderate notes of plum, prune and fig as well with some light raisin. Medium light bitterness as well. Moderate caramel with light toffee and toasted bread. Mouthfeel is medium to medium full bodied with medium carbonation. Low, but present, acidic astringency with low to medium low alcohol warmth. Overall, a nice beer but it doesnβt have much of a dubbel character left to it. Nice fruitiness with good wine barrel character. Better fruit and malt notes as it warms.

Bottle thanks to Chow. Pours a cloudy orange with small white head. The aroma is strong funk, oak, lacto, lemon zest. Thin mouthfeel with nice lacto, oak, tart, lemon, lingering tartness, wow really enjoyed this.

From notes taken while drinking the beer from a tap at the brewery. Aroma is fruity with tropical fruit and stone fruit as well as a moderat citrus note and a moderate fruitiness. Medium oak and light tannins with some light acidity. Pours a cloudy, pale yellow gold with a small white head with good retention and light film. Light lacing as well. Flavor is moderately tart with nice citrus notes. Light tropical fruit. Medium light oak and oak tannins. Medium low bitterness. Faint funkiness. Mouthfeel is medium low bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really nice beer. Similar to BA Cellarman but with a bit of funkiness as well. Good tartness and oak notes with quite a bit of fruit and citrus.

Poured from a 750 ml bottle. Aroma is slightly grainy with a nice, light white wine note and some light oak and tannins. Medium light red apple notes with some peach and pear. Light citrus notes with e medium light phenolic character. Pours a slightly cloudy, pale yellow gold with a medium sized, fairly thick head with decent retention as it recedes to a thin film and lingers. Medium light lacing and faint legs. Flavor is slightly sweet with some grain notes and bread character. Medium light tartness with some light oak and white wine tannins. Light white wine character as well. Low bitterness and a slight mineral quality. Hints of stone fruit and red apple as well as a light phenolic character. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a delicious beer and super enjoyable but the aroma is a bit more complex than the flavor. The beer is a bit delicate to support all the wine character in the flavor.

From notes taken while drinking from the tap at the brewery. Aroma is super hoppy with a ton of tropical fruit and citrus. Medium light pine and wood resin with medium cracker malt notes. Pours a cloudy, pale yellow with a moderate white head with decent retention and good lacing. Flavor is very hop forward with a light sweetness and medium light cracker malt backbone. Moderate citrus hop notes with light tropical and stone fruit and moderate pine notes. Medium high bitterness. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really nice IPA; probably my favorite from SARA. Really nice hop profile, with a clean yeats character and nice, light malt backbone in the aroma and flavor.

From notes taken while drinking from the tap at the brewery. Aroma is a bit odd. Some over ripe stone fruit and red apple with a bit of peppery phenolic notes. Light yeast character. Phenolics border on poopy. A bit grassy as well. Pours a fairly clear, golden color with a moderate white head that exhibits good retention and moderate lacing. Flavor has nice light malt notes and a touch of sweetness. Light stone fruit and red apples. Moderate phenolic and woodsy note. Fairly strong and somewhat harsh bitterness. Mouthfeel is medium bodied with medium carbonation. Low, but present astringency and low alcohol warmth. Overall, an alright beer but the bitterness is harsh. The beer is also too woodsy and a touch poopy. Not what I was expecting from a SARA beer.

From notes while drinking from a tap at the brewery. Aroma has a nice light graininess with a great yeast character. Nice clove phenolics with a light mint and pepper note. Moderate over ripe stone fruit and a light red apple note. Pours a cloudy, pale yellow gold with a moderately thick white head. Really nice retention as it recedes to a small film that lingers. Really nice lacing. Flavor has a nice light grain character and a hint of sweetness. Lots of yeast character. Moderate phenolic notes, mostly clove, but also coriander, pepper and mint. Moderately light stone fruit with hints of red apple and citrus. Moderate bitterness and a bit of a mineral character. Mouthfeel is medium light bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a really nice small Belgian beer. Great, clean malt and water profile. Really nice yeast profile that works well with the malt notes.

From notes while drinking at the brewery. On tap. Aroma has a really nice medium stone fruit and tropical fruit note. Medium light oak notes with a nice citrus character and light malt. Light tannins and wine character. Pours an orangish copper with a bit of cloudiness and a small white head with alright retention. Light lacing and small legs. Flavor has a nice tartness with a great juicy pineapple and tropical fruit character. Medium light citrus with medium light bitterness. Light malt notes with light oak and a bit of oak tannins. Nice hop flavors. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really delicious beer with a nice hop character that works really well with the barrel notes and yeast character. Iβm really enjoying these dry hopped sours.

Bottle - Cherry, chocolate, tart and a bit of tobacco. Deep brown with a beige head. Chocolate and sour cherry, dark malts and some balsamic. Very nice.
