Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle shared at Bruce’s in London - big thanks to the Boss. Pours hazy, yellow-orange with a creamy white head. Lovely citric aroma, plenty of mandarin orange, tangerine. Light sweet flavor, good and tangy, loads of citrus fruits, perhaps some really ripe and juicy apricot. Light to medium bodied with average to lively carbonation. Juicy and somewhat thick citrus fruits to finish, fleshy apricot, moderate acidic lemon burn. Quite drinkable though does have a bit of kick. Really nice.

On tap at the brewery. Aroma is fairly coffee forward with some light chocolate and roast notes. Hint of sweet honey and caramel. Low fruit esters. Pours a dark brown with a moderately thick dark tan head with pretty good retention. Good lacing and small legs. Flavor is similar to aroma with coffee being most prevalent but the honey adding a nice flavor contribution and complimenting sweetness. Some light chocolate and moderate roast. Medium low bitterness and a some roasted notes round out the beer. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. A slight smooth silkiness makes this go down easy. Overall another good beer from SARA. I would have liked to try this beside Joe Chavez to see which I preferred. While the honey note is light it does add some character.

Bottle shared at CBC Clerkenwell in London - big thanks to Aaron. Pours dark brown with a creamy, tan head. Acetic berries in the nose with some decent tangy funk. Light sweet flavor with strong, bracing acetic berry twang, faint vinegar, ripe blackberries. Medium bodied with fine, fizzy carbonation. Good sour berry finish with further acetic punch and a bit of funk. Nice one.

Bottle split at CBC, big thanks to Aaron for hauling this one over the pond - he was so keen to see us all again he came 5 months early ! 05/12/13. Murky mahogony brown with a thin tan swirl and edgework. Nose is tartened dark fruits, burnt plum notes, dank straw, smoke, touch of dry rot, dark berry fruit, dirty wood. Taste comprises light burnt notes, dank straw, funky, tarte blueberries, barnyard, dark fruits. Medium bodied, fine carbonation leading to a dry finale with a lactic tang. Top draw sour affair!

Bottle tasting at Craft Clerkenwell. Thanks to Aaron. Opaque dark brown beer with a small pale tan head. Palate is crispy and dry. Mild minerals. Tangy dark fruits with a touch of sour cherry. Little sherbet and coca cola, well buried. Finishes light and crisp. Good.

Bottle shared with Alan and Dennis. Pours yellow gold with no head. Nose and taste of sour wheat, lemon, lemon cake, light cheese, tangy citrus and sourness. Well balanced acidity. Soft carbonation. Lighter bodied.

Growler @ Armin’s palace, courtesy of Steve_0. Thanks! Pours a hazy yellow golden appearance with a white head. Spicy dank onion hoppy, lemony herbal aroma. Straw, chewy grassy, onion, light garlic, dry spicy hoppy flavor. Very easy to drink but doesn’t blow me away.

Bottle. Hazy amber beer with a cream head. Tart and light yeast aroma. Lemony tart flavor with light sourness and light yeast. Medium bodied. Lemon and tartnes lingers with light sour notes, light oak, and light yeast.

Batch 4 750mL bottle. Aroma is fairly fruit forward with a lot of apricots. Light acidity and faint barnyard funk. A hint of a sulfur and medium light oak notes. Pours a very murky golden yellow with a thin white head that recedes quickly to the edges. Light lacing and faint legs. Flavor has moderate acidity with a nice moderately strong fruitiness. Light funkiness with a complimentary oak character. Light sweetness. Lingering acidity and fruit character. Mouthfeel is medium light bodied with medium light carbonation. Low astringency and low alcohol warmth. Overall a super enjoyable fruity farmhouse beer. Tons of apricot character with nice light oak and complimentary yeast character. Very easy drinking beer for all occasions.

On tap at the brewery. This is incorrectly listed as a porter, but is actually an IPA. Aroma is dominated by dank hops with moderate grapefruit and lighter pineapple notes. Light phenolics and cracker note. Pours a cloudy golden yellow with a medium thick white head. Head recedes fairly quickly to a light film then lingers. Medium light lacing.Flavor is similar to the aroma with a medium light cracker malt note. Medium dank hops with medium high grapefruit citrus notes. Medium light pineapple. Light phenolic note with medium strong bitterness. Bitterness hits me as a bit harsh. Finished nice and very dry.Mouthfeel is medium bodied with medium carbonation. Low hop stringency and low alcohol warmth.Overall an alright beer but the hop bitterness is a touch harsh. I think I was expecting a fruity Brett beer, but this is definitely on the dank side.
