Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle. I missed this release, so hella thanks to felipe for sharing this with me! Pours deep brown to black with a small brown head and decent lacing on the glass. Aroma is roasty, cocoa, light notes of smoke, vinous. Fairly light on the nose overall. Flavor follows, lightly tart and roasty, some fruity/vinous notes. A bit of oaky astringence leading to a dry finish. Fairly light bodied, but smooth.

Trying batch 1 and 2 together. Pours black with a tiny bit of brown around the edges. Medium light brown head. Some lacing, good retention for a sour. The first batch has a mild aroma with an acidic berry edge, some soured roast fruitiness. Batch 2 has a lot more berry character and sweetness. It generally comes together better with more depth and complexity, adding in more chocolate and some coffee. Taste is similar for both versions. Batch 1 is pretty acetic and sour but lacks the richer stout and berry flavors of batch 2. The second batch has a wonderful mix of chocolate, roast, berries and sour. It all works together much better than I expected. Very tasty stuff. Mouthfeel is thin for batch 1 but fuller and fairly smooth for batch 2. The second batch us clearly superior at this point and is probably the best dark sour that I’ve tried.

Pours pale yellow, straw colored. Quite cloudy. Medium white head. Lots of small bubbles. Aroma is earthy with a very nice saison yeast character. Mild lemons. Some rye spice. Very grain-ish flavor. It almost has an oaty quality to it. Light, refreshing taste. Lots of grain but still fairly dry. The grain variety is quite interesting. There’s significantly more depth than a regular saison. Lots of bready notes bouncing around. Feel is light and creamy. Very nice light saison.

Craft Clerkenwell tasting. Thanks to Aaron. Very hazy gold beer, little white head. Light mango on the nose, little peach as well. Palate is light and lightly crisp. Mild white wine like sourness. Sherbet and a pinch of chalk. Finishes semi dry. Just a nice overall sourness to this one.

Bottle - thanks to Mike for the share! Pours hazy golden with a small white head that sticks around and laces well. Aroma is light lemon, yeast, funk, perhaps oak, pretty simple overall. Flavor is the same, not overwhelmingly complex, but medium tart, some funkiness, juicy with a touch of initial sweetness and a dry finish. Light body and champagnelike carbonation makes this one very easy to drink; almost a cross between a berliner and a gueuze.

Bottle - thanks to Mike for the share! Pours opaque brown with a small tan head and decent lacing. Aroma is interesting with notes of tart cherry, roastiness, and oak. Flavor is the same, with oaky and roasty notes mixing quite well with the tart and bit of funk. Light tart, light sweet, with light astringence from the time spent in the wood. Perhaps some cigarette action going on as well. Medium body. Interesting beer.
