Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

From bottle at Triple Rock Brewing during Sour Sunday 2014. (my first one from this brewery) Hazy golden with a small white head. Sour aroma and taste of fruit, citrus, some yeast and bread. Easy to drink. Quite tasty.

From bottle at the Brewery during Sour Sunday. (my first one from this brewery) Hazy yellow with a white head. Fairly light aroma of citrus, bread and hay. Similar taste, also with light spices and yeast. Soft and easy to drink. A descent one.

On tap at the brewery. Aroma is very roast forward with a nice coffee note. As it warms a nice chocolate note becomes more noticeable. Nice wheat character compliments and smooths the edges of the roast. Pours a dark brown, but not quite black with a moderately sized dark tan head of moderate thickness. Good head retention, slowly receding to the edges where it lingers along with a thin film on top. Moderate lacing and faint legs. Flavor is similar to the aroma, but the roast is much less prevalent and is instead more of a background and mid palate note. Lots of nice wheat character and nice chocolate notes. Mouthfeel is medium bodied and very creamy with medium carbonation. Low astringency and low alcohol warmth. Overall a very enjoyable stout that shows how wheat can smooth out roast character. Nice chocolate character as it warms.

From a cask at the brewery. Aroma has a moderately strong floral and herbal hop character that works well with the spicy phenolic notes from the yeast. Medium light fruitiness with pear, tropical fruit and red apple. Light graininess. Pours a cloudy yellow gold with a small white head of moderate thickness that recedes fairly quickly. Moderate lacing and faint legs. Flavor is similar to the aroma with a light sweet graininess and a touch of cracker character. Moderate ester character with a lot of pear, light tropical fruit and citrus. Hop notes are lighter but they still add a nice spicy herbal quality that works well with the phenolic pepper notes from the yeast. Moderate bitterness. Light to medium light tartness in the finish. Mouthfeel is medium bodied with medium low carbonation. Low astringency and low alcohol warmth. Overall a very enjoyable beer, especially if you like the spicy, herbal hops. Nice yeast character that works well with the hops. Light malt character compliments.

Tap@SARA. Pours almost milky golden, small white head, decent lacing on the glass. Aroma is a citrus bomb, as advertised, dank and strong, pine notes in the background. Flavor is lightly sweet, a bit dry actually, light bitterness, juicy. Finish is try with little lingering bitterness. Medium body, smooth mouthfeel. Nice not-quite session beer.

Bottle. shared @SARA. Pours cloudy chestnut, small tan head, decent lacing. Aroma is tart cherry, oaky, a bit of barnyard funk. Really opens up as it warms. Flavor is light sweet, light tart, some funkiness but not strong, lots of oak tannins, but not much astringence. Fairly light body, drying finish. Let this one breathe a bit if you want to enjoy it.

Tap@SARA. POurs hazy golden, small white head and nice lacing on the glass. Aroma is peppery, grass, some unusual fruitiness. Flavor is the same, not really complex in any way, but a simple clean saison. Medium body, refreshing, but nothing special.

Very cloudy. Sticky foamy head. Nose is pine cones resin and tangerine. Yeah, uber resinous. Sticky dank and full of pine needles. It’s as expected. Finishes harsh. I’m not a fan of these but it’s still nice

Insanely cloudy. Nose is very simcoe heavy. Grapefruit rind taste. Very floral and herbal. Just a nice simcoe IPA. Mouthfeel is spot on
