Bottle from their spring(?) cider club. Mailed to me & forgotten on the basement shelf for several months. Chilled for two weeks & served in a lo-ball at home while waiting for dinner to bake. Mousse-y pour, soda sizzle. Mostly clear, active, mildly dull & hazed mellow gold. Earthy, tropical funk. Dry grape & overripe pineapple nose. A little sidra rubber. It eventually opens up to some bittersweetness. Their cultivated fruit doesn't carry wild yeasts nearly as bold. Upfront sour cheese makes way for a very fresh, sweet pineapple & Snapdragon-like juicy tartness. Quick hit of pungent earthiness. Sharp white grape & dessert pear skin on the tail. This one is only faintly tannic. Finish is surprisingly just under dry-ish for a perry. Bite-y, very full soda bubbles, super even & consistent. Slight Medium-high acid, boozy enough, not enough sulfites to hurt. Sorta better with the table fruit. Eve's flavor profile is all over the place now with this borrowed fruit. Only thing you can bet on now is the good bubbles.

Spring bottle club. Couple days in the fridge. Pint glass at home. Clear, medium, metallic gold. Obvious sweet & floral dessert pear skin, green melon, plastic, thick honeysuckle nose. Semi-sweet, Bartlett skin, lemon & farm funk. Unappealing spent grain flavor that dissipates. Some melon & strong cider vinegar on the tail. Medium acid, slightly metallic, sour sidra. Buttery, full carbonation, sugary, tart, sour. Too vinegary but I like how it started.

Bottle from their spring bottle club. A few hours in the fridge, mojito glass pour. Honey, sappy, mild maple, oak-y, spiced breath. Seriously savory & spiced bittersweet apple. Mix of clove, allspice, horsey yeast, wheat, clay, melon, with enough sugar lingering throughout. Flavor is really unique & wtf. Drying, pithy, earthy stiff, mild barnyard, irritating but constant carbonation. Caramel. Lingering dampness that I can't categorize. Lovely bittersweet. One of the most unique ciders I've had from Eve's in years(& they're not even their apples).

Didn't know the brews were any different till the paperwork on #3 told me so. Drank #2 as a casual pour & thought nothing crazy about it. Whoops. Mojito glass at home. Strong purple fizz but quick to settle. Dense semi-sweet grape juice & earthy apple nose with a bit of grass. Earthy apple skin, astringent second runnings, boozy grape skins, touch of licorice. Acidic juice, clay, slight pith, thin, bittersweet leaning bitter, touch of very mild funk. Spritzy carb, light body & medium abv. Good, if less juicy then past renditions.

Unintentionally aged bottle. Sat in the fridge for 6-8 months. Lo-ball @home. Clear, pale amber, fizzy. More earthy than bittersweet. Yeasty, mealy, grainy, farmy, sweet n sour nose. Taste is mealy, damp, tart, off-dry to dry, bittersharp, too earthy, Eve's is usually cleaner. Second pour the day is more steel-y, sharp, mildly tannic & with only a bit of old Cheerio oxidation. Crispy, very acidic, a little boozy & much drier than when fresh. Iffy to good-ish.

Bottle from their cider club. A bit of a sleep in the basement. Served as is on a particularly cold day. Pint glass @home. Clear, oily medium gold with a quick soda head. Fumy maceration, browned apples, tobacco, sweet grain & farm funk. Really pushy nose. Steel, more bittersharp than bittersweet, lingering earthy funk, pear floral, pith, vanilla & slight sweetness. Old cheese rind. Slightly mousey. Definitely more pear/quince in this year. Lightly sizzle, lingering sharpness, low tart but medium high acid, thin. Good+, but hard to pound back a bottle. Just when I felt Eve's has gotten too pedestrian.

Bottle from their cider club. Completely different blend upfront, but at least it still has some Krys. Couple weeks in the fridge. Mojito glass @home. Thick but fleeting head. Clear, metallic, honey amber color, faintly active. Sweet, lightly floral, warmed lemon-honey, bitter scotch nose. More sharp then bittersweet upfront, like a fresh Snapdragon apple. Lemon-honey, lemon pith, sweet corn. Dirty Marigold floral. Calcium bitterness, continual Sweet-tart through the finish. Cork, raw oak, raw booze & oxidation on the tail. Sizzling carbonation, pithy but not egregious dry mouth; could be stronger. Really easy to drink. Drinks better then I rated it. Good+.

750 from their bottle club. Month in the basement, couple weeks in the fridge. Rare Vos glass @home. Dusty but see through, pale orange-amber, fizzy pour. Earthy, dry barnyard, veggie-vinous, dried apple nose. Taste is upfront vinous, super pithy skin, juicy bittersweet, slight citrus peel, sharp grape, cake-y yeast, soft oxidation, & a hyper-drying popsicle stick finish. Sulfite headache. Medium low but fizzy carb, juicy, wet, about right abv. Okay to good.

Vintage-y bottle from their cider club. Couple weeks in the fridge to settle. Mojito glass @home. Strong pour, good mousse. Hazy honey gold. Smell is a rich mix of herbal & twangy, aerosol bittersweet, very plum at the end. Cherry + plum, dark cake. Semi-sweet, very sharp apple, lingering cherry skin, some old wood, soda water, yeasty cherry finish, slight menthol, bitter popsicle stick finish. Deep. Suddy, acidic, cherry-lime sweet, boozy-ish. Very good. Borderline great. Just needs a cohort to blend with.
