Description
It is a small family beekeeping farm, founded in 2002, located in Olomouc - Neredin. Our hives are largely located in the wooded landscape of the Low Jeseník. This area is also suitable for bee colonies because it is relatively ecologically clean. It is not burdened by intensive industrial and agricultural production. Meadows, pastures and forests predominate here. While we have beekeeping facilities in the hills, we sell honey and other bee products from the yard at the Olomouc address. With our honey, we also go to events such as Christmas markets in Olomouc, fairs, etc.
Since the beginning of our beekeeping, we have been trying to focus on the quality of our main product - honey. I emphasize the word "quality", because there is a big difference between honey and "honey". It turns out that the intention was right. People appreciate good honey, they pass on information and the interest in our honey is growing. We offer a pure natural product, without any additives, honey such as the bees brought it. We offer honey, which we have treated as gently as possible, in order to preserve all biologically active substances valuable for our health.
We strive to obtain generic honeys, i.e. honeys in which the smell of a certain plant predominates, so that the offer is varied for consumers, so that they eat honey of different flavors and aromas and have at their disposal the honey they have liked.

Poured from 350mL bottle (bottled 5/10/2022; Cabernet 2021 vintage). Clear garnet red with no head. Honey with underlying red grape skins, background complexity, decent.

350mL bottle, pours a clear ruby red. Aroma has lots of red wine grape skins and fermented out honey. Flavour is on the drier side, with lots of musty dry grape skins, moderately-to-highly fermented out grape skins, and light treacle. It’s drier than I usually like in meads, but there’s undeniable complexity and depth here. Excellent.

Reddish colour, bright. This has a decent vinous note, and a woody sort of character from the honey. Has a lot of sticky honey, and then the cab cuts through with a bit of acidity. Good balance. I'd like a more complex honey character but good richness.

350mL bottle. Pours clear light red. Grainy honey and red wine grapes on the nose. Flavour has red grape skins, well-fermented honey; fairly dry throughout. Nice grape expression while retaining a fairly high degree of delicacy; nicely done.

Bottle pour at Medivarna. Pours clear pale blonde. Light honey and elderflower on the nose. The honey character in the flavour is a bit subdued, plenty of elderflower; not sure how well this combination works.

(Bottle sample at Medovinárna, Prague, 19 July 2023) Pale yellow colour, no head. Fruity, floral nose with notes of elderflower, honey and grass. Fruity, floral taste with honey, elderflower, birch leaves and grass. Slightly vinous finish. Medium body, sweet. Sweet, floral and harmonious with a rich, but balanced, elderflower character. Very nice.

Pours a darkened browned garnet . Scent is very grape-forward, even presenting some variety-typical notes of black fruit. tad herbal, some bell pepper, honey is fairly hidden, but provides a more 'full' experience than the wine of it's own would have had. Taste is full, smooth, veyr mild tannins - softened by the honey obviously. Lovely balance, I honestly expected the grapes to overpower more. This is a more than fine Pyment! lovely body. Mild oxidative notes (sample flask, might be unique to my sample, but I love it). Overall, pretty impressed by this one, I expected to enjoy far less than this.

Pours a browned amber, quite some flakes present. It's sampled from a handfilled sample flask, and this might have been the bottom of the bottle, but even than, still, this shouldn't happen in mead? Scent is very herbal, mown grass, hay almost. Not very pleasant. Taste is sweet, thick, very sugary, mouthcoating. Herbal fruityness, weird bitterness. Very much not my thing.

Sampled besides the non-carbonated version. Both in sample flasks, so probably not ideal for the carbonation level. Pours a bit less browned than the regular version (which did showcase a lovely nutty aroma, might be oxidized? ) still a garnet shade though. Scent is definately more fresh and vibrant than the other one. Still intensely fruity, but less intense indeed. Taste is lovely intensity (though less intense) of the fruityness. The carbonationlevel is very low , and super fine bubbles (which I love) . it missed the nutty aroma the other one had (due to oxidation?) which makes me prefer the other one over this. Still, a very nice mead !
