Sampled at the cidery, pours a clear pale gold with some clinging white head. Nose and flavor were the cleanest of the bunch, pure tart apple, juice, some pear, a little lemon. Crisp on the finish. A standard starter cider, but lots of apple character.

Sampled at the cidery pours a mostly clear gold with some light, soapy head. Nose has some really cool cheesiness to it, some fresh cheddar and even some funky blue, straw, but obviously tart apples, very few hints of sweetness. Flavor is solid, tart green apple, apple skins, light butter, some cheese, straw. Crisp and dry on the end. Lovely.

Clear dark golden, not head or lacing. This is a pleasant surprise. Aroma and flavors are woody, bourbon, crisp apples and some bourbon

Tap at Stem - completely still (of course) - quite similar to the Malice, but actually quite a bit more tart, almost sour, even - very clean and crisp - the lack of carbonation adds a slickness to the mouthfeel - even more white grape/vinous notes than the Malice - a light metallic note is a minor complaint - apple skin and overripe apple flesh finish, with a puckering dryness/tartness that lingers on the tongue - a subtle, solid still cider.

Tap at Stem - unlike the cider aged in zin barrels, the barrel in this one doesnโ€™t quite work, and covers up some of the delicate flavors of the base cider - bourbon is very evident in the nose, and kind of a distraction - the barrel is less evident in the flavor, adding a toasty vanilla note and minimal sweetness - the finish is where you can finally taste the apple and tart character of the cider - dry finish - my least favorite here.

Tap at Stem - slightly hazy - the char of the barrels adds an interesting smokiness to the nose - the wine barrel also adds some toasted oakiness, vanilla, tannins - however, none of these qualities overpower the delicate nature of the base cider - the tart apples are still center stage - nice full, creamy texture - dry, moderately oaky finish - I really like this one.
