Most of it consists of adapted, salvaged or second-hand equipment. Since July 1, 2007, they have been renovating an old barn and stable in the village of Revermont Jura, La Ferté. They started brewing there in June 2008 with the aim of increasing production to a livable level, ie 300 hl per year or 3,500 bottles to be marketed per month.

Bottle. BXL Beer Festival 2023. ABV 7%. Large gusher. Color: Hazy yellow golden, white head. Aroma: A lot of Brett funk, hints of stone fruit. Taste: Citrus fruit notes, stone fruit, dry mouthfeel, a lot of rural Brett funk, hopbitterness at the background. Slight tartness, light to moderate sweet and bitter. Slightly metallic at the finish. Ok.

0,75l bottle at home. Vintage 2020. BB 05/2040. yellow murky color, medium big white head. smells funky, earthy, grassy, bretty, spices. nice smell. full body, pearly carbonation. tastes spices, citric, grassy, yeasty, bretty, earthy. finishes lightly dry with notes of pepper, grass and bretty notes. pretty good one, not the most complex, but for the abv pretty smooth and easy to drink. Rather enjoyable.

Pours tad unclear blonde, medium white head. Smell is full, grainy saison. brett is hidden. Taste is full, bitter, dry. Malty, slightly buttery. Brett is mild, somewhat fruity (yellow fruits) . medium body, medium high carbo.

Saison from this craft brewery in the Jura region in eastern France, refermented with Brett and created especially for the BXL Beerfest of this year, which due to the Covid-19 pandemic could not take place; 75 cl shared with Craftmember. Irregular, snow white, cobweb-lacing, mousy, gradually breaking and opening head on a hazy, deep golden blonde beer with apricot tinge. Aroma indeed very funky-Bretty in a highly phenolic, almost somewhat 'chemical' kind of way, reminiscent of the classic 'horseblanket', stale urine, slight band aid, hint old sweat, watermint leaf, banana, damp tree leaves, moist jute bags, old wrinkled apples, peach, lemon zest, cloves. Estery onset, quite lively and colourful, unripe banana and peach mixed with pear and lemon peel aspects, medium carb, soft enough not to interfere with the flavours; supple body, a lovely bready maltiness with mild sourish accent underneath, dryish finish with a herbal hoppiness but also a lot of Brett-induced phenols, clove-like but a bit band aid- or 'hospital'-like as well; spicy, funky, grassy, quenching ending. Very Brett-forward indeed so delivering what it promises I guess, but feeling a bit as if the wild yeast grew up in a lab rather than in a more natural environment; still convincing enough, though, so if you like wild ales with a lot of Brett effect, this one is for you. Enjoyed it, all things considered.
