Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

750ml bottle. Opalescent, orange, dark golden colour with small to average, frothy, half-way lasting, barely lacing, white head. Mellow malty, vinous fruity and mildly funky aroma, hints of (dried) red berries, rosé wine, weak, woody, oaky overtones. Taste is mildly tart, vinous fruity, mellow malty, mildly funky and minimally woody, hints of (dried) red berries, rosé wine, a minimally tannic touch of oak.
Oily-watery texture, smooth and soft, minimally greasy, simultaneously minimally astringent palate, medium to fine, minimally scattered, mildly prickly carbonation.
Mild and mellow, clean, soft, homogeneous - very nice.

Pours a clear yellowblonde. Small white head fades instantly. Scent is buttery acidic, fairly simple nose. Some wood. Distant brett.

Taste is sharp, dry, acidic, citrus, buttery acidity. Mild wood, very distant brett. Not great, not awefull. certainly could use a better variety of acidity and more balance.

Bottle @ SirAlex share. Cheers. Pours cloudy red with a small head. Dark and blue berries. Red Wine. Balanced. Good drinkability.

Pours unclear pinkred. Scent is medium fruity. taste is tart, simple acidity, some fruits. Feels very hollow and basic. Not great, but nothing off

Pours unclear, beautifully purplepink. Scent is earthy, unripe fruityness. Twigs. Taste is sharp, dry, earthy, herbal and twigs.

Pours bit unclear blonde. Small white head. Scent is full, apricot, fairly clean acidic backbone with a bit of funky acetic acid to it. Taste is full, sharp and tart. Midlly acetic, astrigent acidity, not overly complex. Peachy.

10kth Brewver rating. Probably my last new Wildflower at least until they set up shop elsewhere. Bottle, 12C. Very clear rosy amber, fading white head. Aroma is floral, mildly funky and a bit nutty with some berries. Just medium bodied, low carbonation. Slightly slippery. Has some acidity but it's hard to say that it's sour. A little fruitier - berries, grapes, apricots - than it smelled. Some boot polish, oak, hints of spices and bracken. Quaffable with some intrigue - which is what I'm after.

Disig oransjebrun med hvitt luftig skum. Lukter svovel, sure bær og urter. Mild og lett syrlig. Tørr. Svovel, eple og syrlige bær i smak. Veldig tørr avslutning.
