Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

16oz can pours crisp clean pale straw topped with a white head. Nose is light corn some grassy hops. Taste is more of the light grain grass and some corn.

On tap. Pours a copper color with light head. Aromas of subtle dry caramel and toasted malts. Flavors of bread crust, grass and toasted malts.

Poured from the tap @ Seymour Pub. Clear gold with small white head. Crisp, crisp, pils malt, okay German style pils.

Tap, Clearly
Blond colour, clear. Very weird aroma, chemical (reminds me of synthetic fabric). Dry and barely flavoured, flat vibe, intensively boring.

Poured from the tap. Clear gold with small white head. Nice biscuit malt, mild pine and citrus hops. Decent, pleasant surprise.

473 ml can. Pours a dull amber with light head. Aromas of mango, dull orange and wheat. Flavors follow same with lots of wheat and salt. Thick

Can. Fruity hop nose. Modest bitterness. Thin, slightly biscuity malts. Fruity hops, seem generic but could use more malt sugar to prop them up. Not bad though. Could certainly substitute for an IPA.

A can delivered my way by fate. Pours appropriately cloudy blonde, with thick head that sticks around. Taste is... muted. I was expecting alot more of a hop hit. I get some resin, a little soap, over a bready, fairly dence malt, with a little lingering tangerine and a touch of bitterness on the finish. That is all well and good, but it's just underwhelming.

473ml can. Pours a hazy yellow orange with a small, foamy, white head that leaves spotty lacing. Mild, sweet fruity aroma of bready wheat malt, mango, orange and floral hops. Sweet fruity flavour of bready wheat malt, mango, orange, salt and floral hops in a slightly tart lacto finish. Light body with a watery texture and average carbonation. Juicy, refreshing and crushable. Would make a great patio beer for summer.

Roast and light coffee. Some musk. Black pour with great mocha head and lacing. Light bitter finish. Pleasant beer, nice drinking. Can.
