Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

Coke colour, smooth tan head. Nose and palate of light roast and juniper notes. Dry malt, nice bitter finish , but needs more of a roasted tone

Gold, huge white head, no bead whatsoever. Grainy nose. Thin with fruity notes and vague hops, not much else

473ml can. Pours a clear red amber with a medium, creamy, short lived, beige head that leaves curtains of lace. Sweet aroma of bready caramel malt, fig and raisin. Sweet flavour of toasted bready malt, caramel, fig, raisin and grassy hops in a dry, mild bitter, warming booze finish. Medium to full body with a soft, creamy, smooth texture and average to soft carbonation. Malt forward and tasty.

473ml can. Pours a clear dark brown, almost black with red hue and a small, foamy, short lived, beige head that laces nicely. Aroma of grainy roasted malt and coffee. Semi-sweet flavour of grainy roasted malt and herbal hops in a crisp, dry, bitter coffee finish. Light body with a watery texture and average carbonation. Not a lot of complexity, but interesting.

473ml can. Pours a clear yellow gold with a medium, foamy, short lived, white head that laces nicely. Mild sweet aroma of grainy wheat malt and floral hops. Sweet flavour of grainy wheat malt, indistinct fruit and floral hops in a dry, mild bitter finish. Light body with a watery texture and average carbonation. Refreshing and crushable.
