Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.

Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

Can. Hazy amber. Thick head. Toasty aroma, with orangey hop notes. Grainy, slightly sweet, a bit worty in the finish. Mellow bitterness. Definitely tastes like an NA; not the smoothest balance.

Poured from 355mL can (bb Jan 05, 23). Clear-ish dull gold with small white head. Weird stale doughy malt, drain pour.

473ml can. (2022 vintage). Pours a clear red mahogany with a medium, foamy, short lived, beige head that laces. Sweet aroma of caramel malt, raisin, plum, cherry, light cinnamon and floral hops. Sweet flavour of caramel malt, brown sugar, plum, fig and cinnamon in a dry, mild bitter, warming booze finish. Medium body with a sticky, syrupy texture and soft carbonation. A bit thin for the style, but still tasty and enjoyable.

A Clearly can
Hazy blond colour, large head, leaving a nice lace. Mild aroma of citrus fruits. Lean body, off-dry, there is some bready malt, and some lemon custard; the bitterness is balanced.
Not bad.

Some straw, a little lime. Golden pour with ok head. Cloying tangy finish. Not really a great kolsch. Could do with some crispness. Can.

Chestnut, lasting beige head. Light malt nose.Sweet fore spicy Belgian yeast, dark fruit notes. Medium bitterness in finish

Dark brown, small tan head. Sweet boozy fruity nose. Notes of fruit in palate but mostly bitter from alcohol and hops... Too boozy
