Bottle ($25.99). Paler yellow pour than expected. Straw hue, still, good clarity with extremely viscous legs. Aromas are spicy, waxy mildly fruity with brown sugar a good amount of vanillin and lactone. Cereal, nutty raisins, date sugar, pecans and rye whiskey. Pretty complex once you become accustomed to the alcohol. Flavors are big and alcoholic, bold raisin and mejhool dates, toasted coconut, dry rye whiskey tannins, alcohol. Complex nuttiness and honey. Sweet, but balanced by tannin and peppery alcohol. Pecan pie and whiskey. Full bodied, a lot if heat without being fusel. In your face. Complex but not subtle. I like it.

The tall blue glass bottle pours with a pale gold colored body with the slightest of haze and leaving behind legginess like no other as it doesn’t seem to go away but the legs just stay there along the inside of the glass defying gravity, damn! The aroma is rich and inviting with a mix of smooth sweet honey, a nice honeycomb sort of sensation along with mild notes of wild flower. The end of the draw is a bit boozy with a light barrel of bourbon sense as well as a shot of boozy heat. The taste is so smooth and rich with sweet honey tempered by the mildly fruity sort of sweet candied wild flower, if that even makes the slightest bit of sense, and then slivers of pleasing earthiness that binds this together. It then picks up some smooth mildly sweet whiskey like notes heading into the finish. This is rich and yummy and I can sip this just all day long if I could get more. Wow!

Bottle split with Ibrew2or3, thanks Dave. Dorée foin laissant un filament huileux épais sur le verre. Arôme est fleuri de fleurs des champs et prairie, note douce et mielleuse subtile et complexe avec une présence légère de sucré caramélisé et note de pollen. Palais rend à la fois la complexité du whisky et seigle le tout pour un boisé subtile donnant des notes de vanille très subtile. Le coté fleurs des champs et miel ne sont également pas en reste surtout pour ce niveau d’alcool et ici, se font plus profond une fois que l’hydromel respire pendant une bonne dizaine de minute. De cette manière, un alcool qui peut paraître trop encombrant laisse ample place à la barrique et aux fleurs des champs pour s’entrechoquer en un palais délicieux. Vraiment à déguster par petite quantité. Malgré ses 19% cet hydromel reste hautement complexe et rehaussé ici par ce côté fleurs des champs qui donne un palais frais et agréable.

Big sweet flavor but not cloying, rich honey, some light dry straw. Full bodied with no carbonation. Light warmth to finish, rich honeycomb, touches of bread. Delicious stuff. Very rich and decadent but exceedingly drinkable. Lovely.
