Last can of this poured into a snifter.
Appearance: burnt rustic yellow color with a finger and a half's worth of white foamy head which slid off nicely to leave some super light lace
Aroma: lemon/lime tones, subtle lime zest, melon, sweet grassy tones and a touch of biscuits
Flavor: blended all the prior noted aromas semi-sweet with a touch of zest and a keen maltiness backing that up; light aftertaste of melon, lemon zest and pineapples
Texture: between light to medium bodied, sessionable; nice smoothness along the tongue but some tart features trying to block the smoothness; finishes semi-tart and lemon to lime zesty
Overall: I can see this as a nice Grisette and man oh man, I'm thinking I wish I had a swordfish steak to go along with this beer. To next time, I hope.

Poured into a tall tulip.
Appearance: glossy yellow color with a thin cap of a little white foamy head which glided off nicely to leave some light lace
Aroma: light peaches, floral sweetness, subtle tart edges, light wood and some candied fruits
Flavor: combines all the prior noted aromas nice and semi-sweet with a touch of woody to candied character; no aftertaste
Texture: medium bodied, this one is a sipper, some smoothness along the tongue; finishes semi-woody, tart and peachy
Overall: pretty odd for a Belgian Tripel but the odder thing is that this seems to work and I kinda liked it for me, I just wonder if Wild Bloom maybe needs to look at the style and possibly change it to something else.

Can to English pint glass.
Appearance: ruddy burnt yellow color with a finger and a half's worth of white foamy head which slid off very nicely and left some mild lace.
Aroma: wonderful wood smoke up front - semi-sweet and a touch of sweet meat; subtle freshly cut grass, some lemon underneath
Flavor: wraps up the prior mentioned aromas smoky sweet and leads into a fine aftertaste of biscuits, freshly cut grass and wood smoke
Texture: between light and medium bodied, some sessionability about this, pretty smooth along the tongue; finishes crisp, semi-smoky and a touch of lemon
Overall: I'd say a nicely done smoked beer and finetuned enough to have again possibly in the Spring or maybe even early Autumn.

Lightly to moderately hazy, plum-rose-amber. Small, off-white head.
A nip of plum before a blast of sage. The plum continues to underscore but this is a safe beer by and by. Really aromatic and real with no big lactic character.
Big earthy sage, nicy restrained on oils and/or bitterness. Crackery and or wheat-forward texture, dry. Plum is there but faint. Very light acidity. Easygoing.

Moderately hazy, maize-brass. Small, rocky, white head.
Funky hops, nice and sweaty, cheesy but in a good way. Biscuit and white bread balance. Lots of stone fruit and light, dainty pine.
Soft, fluffy, malty, almost juicy with buttercream and rich yeast. Sweaty hops with rustic flare and great balance. Love how malty it is for its size. This type of beer seems to be the brewer's wheelhouse.

Clear cola-tinted-chocolate. Medium-sized, beige head.
Chocolate and toast, indeed. Earthy, crusty, milky almost. Hard to glean if there's enough base malt.
There is, just barely. Milk chocolate, plum and raisin lead to toast and gentle roast. Clean and chocolatey finish with more plum lingering. Not much yeast character; just getting a ton of, admittedly quite interesting, malt character.

Clear, brassy-gold. Small, white head, quickly to ring.
Hard to get a good feel for this one. There's some spicy-floral notes that could be flowers but it's so close to the yeast phenols that you can't tell. Would never know blind. Otherwise it's clean with good support from a honey-like malt.
Malty and well-attenuated but I'm getting mostly clove and white pepper. No flower. A bit watery and more clove on the finish. Pretty heavily Americanized saison, sadly.

8 oz draft. Flavor does have raisin, fig, and some sugary dates. But it certainly is not a Belgian quad. More like a Dubbel. Untappd has zero Quality control admin’s. Lame ass fools. This is almost like a hybrid. I don’t know what you call this.
