Brewery draught, 10/16/25.
As pictured.
Piney and sprucey with sweet chocolate. A very soft, but not under hopped example.
Malty and soft with juicy pine and lots of soft, moderately sweet chocolate character. Good attenuation and body. I agree with Tom, if you're gonna make this style, especially at 8%, it needs a healthy dose of rich bitterness, which this somewhat lacks.

Classic wet hop pale ale with soft pepper and mild spice. Light honey and white bread from malt. Little/no toast. Good fruitiness.
Nice and malty with plentiful base malt and only a pinch of caramel and a hint of toast. Peppery, gently fruity hops and clean, fresh yeast.

Nitro draught at the brewery, 10/16/25.
As pictured.
Smells like the real deal. Lactose actually being beneficial for a change. Lovely coffee, and vanilla ice cream notes with good roast and light chocolate. Not too sweet.
Soft, lightly sticky-maltyvwith not too much coffee. What's there is fruity and earthy, not dark and roasty. Vanilla, lactose and chocolate all homogenized. Good flavor for its size. Really nice to get a balanced, flavorful pastry stout without all the syrup and sugar and intense adjunct.

Brewery draught, 10/16/25.
As pictured.
Good mix of fruity hop with light white grape and also some dense malt adding rich honey-like notes. Some melon, a hint of pine, light bread and a touch of mango.
Fruity, malty, hoppy with zesty white grape and excellent, not too sweet tropical fruit. This is about as good Hallertauer Blanc as it gets. It's usually too bitter and woody, but here the grape and gentle tropical fruit are expressed without the big pine and astringent woodiness. Malty and dry, with light honey and bread to balance. Lower bitterness but still well-balanced on account of the dryness.

Brewery draught, 10/16/25.
Clear, dark auburn-dark chestnut. Large, dark beige head, good retention.
Dark roasted coffee and chestnut, I suppose, the chestnut being the koji, not that you'd know that blind. Clean, earthy, a bit chocolatey.
Nutty, earthy, koji-like with cacao notes and roasted chestnut. Medium-light body with good depth and attenuation. Low but ample bitterness. I've never tasted raw koji, but I can imagine this represents it well here. Nice that it's not too sweet on account of the rice sugar. Clean, interesting, nutty, complex finish.

Canned 7/1/25, drunk 8/13/25.
Glassy peach-copper-bronze. Large, butter-tinted head, steadily to clumpy cover.
Really nice fruitiness from (assumedly) the yeast and the spruce tips. No big aggressive acidity or resin. Soft honey and white bread-like malt gently balances.
Sprucey and with an earthy bitterness and lightly floral. Not too bitter, not resinous, not dominated by spruce, but done expertly, rather. Soft, deep malts cushion and it's well-attenuated.
On top of everything else this brewery does right, for a small brewery/canning line, their cans are always in excellent condition. And that's certainly not a given, as I think quality usually scales with volume and larger canning operation (though not always, of course).

Canned 7/1/25, drunk 8/1/25.
Clear, muted brass with a large, nearly-creamy, white head.
Clean and malty with excellent lager yeast character joined by gently herbal hops on the snappy, bright finish. Honey and very light bread give it a very helles feel.
Clean and malty with excellent honey-like malt. Soft and supple. Gentle herbal qualities with light bitterness and good dryness on the snappy finish. Very clean, very malty, lots of good yeast character and just enough hop without taking the emphasis off the malt and yeast. Very impressed.

Brewery draught, 7/30/25.
Clear, deep rust-cherry-amber. Little/no head.
Elegant whiskey in the nose with minimal sugars. Light fruitiness, low toast and gentle caramel/toffee. Clean, not boozey, not overdone on the barrel.
Soft, malty, not toasty, with more of a fruit-and-toffee character, not to mention the incredibly well-done bourbon. Bit of breadiness, not too much. Just fantastically-balanced bourbon/whiskey character without too much tannin. Medium-full body with high attenuation. No syrup or sugariness. Excellent lingering mix of acidity, toffee and fruitiness. Very nearly bought a $24 bottle to go, and still may.

Brewery draught, 7/30/25.
Moderately hazy, lemon-maize. Small, dense, white head.
Not as much cannabis character as the last terpene beer I had, but it's certainly there, with plentiful juice-and-skin-forward blueberry. Light citrus beside and sparse, cracker and light white bread-like malt to balance.
Juicy and soft with prominent malt (honey and white bread) and actual hop character (orange, mango, hint of pine). Then the terps hit but not hard. Blueberry and light cannabis. Great balance and lingering pepper, blueberry and soft malt. Nicely balanced and I like that it doesn't go too hard on the terpenes.

Brewery draught, 7/30/25.
Clear, rusty-copper. Small, lightly-cresmy, off-white head.
Bread crust and mild toast in the nose with gentle herbal notes and light fruitiness. Minimal hopping with a bit of caramel and buttercream. Clean, though not overly aromatic. Smells properly attenuated.
Soft and malty, with a bit of caramel up front fading to white bread and very light toast. Minimal hop character but ample bitterness given the strong attenuation. Balanced and flavorful, clean, and doesn't go overboard on the specialty malt.
