By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.
Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

750mL bottle, pours a clear pale golden blonde with a tiny white head. Nose is wonderfully funky, with lots of rustic farmhouse notes, musty grape skins, and crisp apple acidity. Flavour is dry and funky, with lots of farmhouse funk, must grape skins, and crisp apple skins. Nicely funky and vinous, with an essentially bone dry finish. Excellent.

355mL can, pours a hazy blonde with a small white head. Aroma brings out a nice fragrant barnyard funk upfront, with a fair bit of tart plums, and crisp apple core. Flavour is along the same lines, with barnyard funk, crisp apple core, and a touch of tart, acidic plum. Nice funkiness, with a fair bit of dryness and moderate acidic. Not all that complex, but for the price point, it's pretty pleasant.

355mL can, pours a fairly clear blonde with no head. Aroma is full of wild yeast, pear skins, and some white grape skins. Flavour is bright and nicely acidic, with lots of white grape skins, crisp musty pear skins, and lots of wild yeast. Complex, with a wonderful barnyard funk, accentuated beautifully by the wine yeast. On the acidic side, but it's controlled well. Excellent.

750ml @ Sales Force. Appearance: hazy golden with a white head. Aroma: funky, sweet apples, some light manure. Taste: semi-sweet apples, apple skins, some apple seeds, dry bone. Overall: one of the driest ciders I've ever had.

Poured from 750mL bottle. Hazy orangey gold with small white head and a touch of sediment. Very dry, apple, subtle hint of grapefruit, effervescence.

750mL bottle, pours a hazy bright golden with a small white head -- tons of sediment at the bottom that looks ugly. Aroma is full of barnyard funk, some tart crabapple, and a touch of champagne-like effervescence. Flavour is very dry, with lots of barnyard funk, bone dry apples, and some champagne-like effervescence. Bone dry -- nary a trace of residual sweetness. Very good.

Bright gold and clearish depending where in the bottle your pour. Apple skins and some white glue. Bone dry and some funky glue notes. Nothing of note that I liked.
A hazed blonde cider with a thin white head. In aroma, sweet tart apples with light acidity, light plums, pleasant. In mouth, a nice tart mix of apples, plums and light acidity, some perfumy notes, nice. On tap at KBC.
