Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

A pale blonde cider with aroma of sweet tart mix apples, light Brett, light woody notes, pleasant. In mouth, sweet apple jam with Brett, light lactic notes, light wooden barrel notes, pleasant. Bottle from cidery.

Tasting at Matt's slaughterhouse, bottle; vintage 2020
Hazy to cloudy golden colour. The aroma is mildly funky and vinous. Dry, highly carbonated; as usual, the underlying cider is simplistic, the adjuncts add some dimension, light hazelnuts, petals.

Pinkish, slight colour. Light spice to the aroma, pretty good apple notes, nice sugars. Tart, earthy, nice tannins, and good complexity with a quality tannic note. Good stuff.

Poured from 750mL bottle. Hazy orange rose with minimal white head. Quite plum(my) with touch of floral perfume.

750ml @ Matt's parents' place with an unhidden scenic view. Appearance: cloudy peachy with a white head. Aroma: very nice funk, very fruity, some awesome fruity perfumy notes. Taste: along the same lines, moderately acidic, quite fruity, some fermented veggies. Overall: very interesting.

750mL bottle, pours a clear peachy pink with no head. Aroma brings out wild bugs, gently tart plums, and some floral notes. Flavour is moderately-to-heavily acidic, with tart plums, floral notes, and a touch of wild bugs. It doesn't have the depth of some other Revels; not been too impressed with this Ostara series. Simple, reasonably coherent, but nothing special.

Very pale, hazy. Some funk, some apple, touch of spices. Dry mouthfeel, well cabonated; there is some ginger, soap, flowers.

Very pale colour, hazy. Mild aroma that includes also vinegar and hazelnut. Dry, moderately acidic, some fruit juice, some yeast, light acetic acid.

750ml @ Matt's parents' place with a scenic view. Appearance: cloudy blonde with a white head. Aroma: very fresh with a lot of elderflower notes and funk. Taste: along the same lines, moderately acidic. Overall: very prominent flower character here, but it's probably overwhelming.
