Description
Founded in 2018, by Jasper Tupman and Stuart Winstone, who share a passion for foraging, fermentation and flavour. These two invested everything they had, to build their unique vision of carefully crafted beers with a strong sense of place.
Later joined by Dave Williams as Head Brewer and Lee Calnan as Sales Director, 2020 marked the next phase of development for a small team with big ambitions; to bring innovative, modern farmhouse brewing to a wider audience in the UK and beyond.
By brewing with the very best of local ingredients and alternative techniques that span between historic styles and modern brewing technology, our approach to mixed fermentation and barrel ageing puts the emphasis on balance of flavour and drinkability. Minimal intervention is the key to ensuring that there’s a little bit of nature in every sip.

Keg at IMBC 2018, session 4. Pours unclear amber-brown with a foamy, tan head. Lots of tart, aged berries, leather and earth, mellow acidity. Medium bodied with fine carbonation. Quenching finish, more dried, leathery berries. Good stuff.

Keg at indy man beer con. Session 2. A reddy mahogany brown coloured pour with a halo of tan head. Aroma is nice earthy beets, soil,. Tangy beets. Flavour is composed of semi sweet z nutty earthy malts, beets, soil, little cocoa,. Palate is semi sweet, tangy thin, moderate carbonation. Shv good beet character.

Keg at IMBC 2018, session 3. Pours Black-brown with a small, foamy off-white head. Beets come through in the nose. Light sweet flavour, lots of rich, earthy beets, burnt toast, vague cocoa. Medium bodied with fine to average carbonation. Earthy bitterness in the finish, more beetroot, a little more sweet chocolate. Interesting novelty.

Keg at IMBC. It pours cloudy darkest brown with a small beige head. The aroma is earthy, rich roasted malt, coffee, toasted nut, umami, sweet beet and some chocolate cake. The taste is bitter - sweet, dark fruits, candied beetroot, chocolate sponge cake, umami, spice, leather, toasted nut, oak, leather and some tannin with a drying finish. Medium body and fine, prickly carbonation. Quite interesting, works well.

Keg at IMBC 2018, session 1. Pours unclear yellow with a minimalist foamy head. Novel stuff, some lemongrass, citric bite, a little trmartness, vanilla, straw, wheat bread. Medium bodied with fine carbonation. Finishes with notes of lemon meringue, more wheat, tangerine, honeysuckle. Not bad.

Keg at indy man beer con. Session 1. A hazed yellow straw coloured pour with a halo of white head. Aroma is weird bacon crisps, lemon straw.. Dry lemon. Flavour is composed of sour white grape, apple, saison, wine must, lemongrass. Lavender.. Crisp finish. Nice.

Keg at IMBC. It pours hazy yellow gold with a small white head. The aroma is fresh, fragrant, honey, lemon balm, floral and chamomile. The taste is crisp, dry, tart, zingy, floral, honey, floral, daisies, lemon peel and minerals with a dry finish. Medium body and fine, prickly carbonation. Bright and zingy. Fun stuff.

Keg at IMBC. It pours hazy golden with a small white head. The aroma is soft, sweet - sour, plum, minerals, fragrant, thyme, must and sherbet. The taste is crisp, dry, tart, minerals, good mouth - pucker, minerals, sour plum, ime, salty, thyme, cracker, light acidity and some sherbet. Dry finish. Medium body and fine, prickly carbonation. Well judged stuff. Fun. Promising start!
