Description
Founded in 2018, by Jasper Tupman and Stuart Winstone, who share a passion for foraging, fermentation and flavour. These two invested everything they had, to build their unique vision of carefully crafted beers with a strong sense of place.

Later joined by Dave Williams as Head Brewer and Lee Calnan as Sales Director, 2020 marked the next phase of development for a small team with big ambitions; to bring innovative, modern farmhouse brewing to a wider audience in the UK and beyond.

By brewing with the very best of local ingredients and alternative techniques that span between historic styles and modern brewing technology, our approach to mixed fermentation and barrel ageing puts the emphasis on balance of flavour and drinkability. Minimal intervention is the key to ensuring that there’s a little bit of nature in every sip.

Can at the strait and narrow. Off black colour with a pale tan head. Aroma and taste are malty vanilla plenty of coffee and some chocolate. Smooth body.

Tap @ Væskebalancen. No head. Color is murky. Aroma and taste are fruits, malt, lactose acid and has a nice sour finish.

Can shared in Bourne. Lousy orange colour with a thin white head. Aroma is nutty. Taste is mango fruity. Slight tart. Smooth body.

Appearance is nearly black, with a half-finger beige head. Aroma is chocolate, cherry, dark malt, caramel, Black Forest gateaux. Taste is cherry, chocolate, toasty malt, hint of caramel, biscuity notes, bit of sweet chocolate malt.

On tap at The Craft Beer Co, Covent Garden. Milky orange pour. Aronas of peach, mango, red cherries, strawberry, pineapple. Taste is pineapple, mango, red cherries, strawberry sherbet, peach. Nice tarty fruity balance.

Can from the brewery. Pours black with tan foam. Aroma: cake, pastry, lactose, mild sour cherry. Taste: moderate+ sweet, there's an odd slightly burnt malts bitterness with a cherry twang. Medium body. Down with this pastry bollocks!
