Description
We started brewing in 2011, in a small barn in the Cheshire countryside, with a simple goal of presenting our locality with delicious beer.

​A lot has changed since then; we now brew an ever evolving variety of progressive cask beer alongside modern, vibrant beers in can & keg, we now ship our beer further afield, even to different countries, but our loyal audience in the North West keeps us busier than ever and as such we've grown our brewing capacity over time from 100 thousand to 2 million pints per year.

But more than a decade on we are still an independent brewer-owned brewery, passionately crafting beers from our inspiring & beautiful location. Driven by the same energy we have always had, to bring you an ever changing array of bold, vibrant & delicious beer.

Can. Very hazy gold beer, small pale cream colour head. Palate is light, smooth, mildly dry and has good fine carbonation. Fin bolts, mildly sweet. Nice light yellow grapefruit, tangerine and a little pink grapefruit. Trace of pine. Light finish brings a touch of mango. Nice flavours just a touch thin.

Can. Cloudy orange beer, thin cream colour head. Palate is light, semi dry and has a fine crispness. Mild minerals. Thin malts, a light light creamy sweetness. Good fresh orange and tangerine. Mild spice. Very mild mango. Light dry crispy finish. Overall a decent double IPA, clean and drinkable but lacks the complexity of the best.

Can. Murky orange beer, bubbly pale cream colour head. Palate is light, dry and has decent fine carbonation. Thin malts, a very modest sweetness. Tangy orange and orange peel. Traces of tangerine and fresher orange. Modest bitterness on the finish. It's fine but thin and lacks complexity.

Cask at Pig's Ear '17,day one, 05/12/17. Black with a decent tan head. Nose is bitter roast, charr, spice, cocoa powder. Taste comprises tangy dark fruit rinds, tar, roast malts, black peppery spice, chocolate. Medium bodied, soft carbonation, drying close. Average.

ABV: 4.0%. Clear medium amber yellow colour with a small, fizzy and open, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, fruity malt, sweet malt. Flavor is moderate sweet with a average to long duration, fruity malt, pale malt, fruity, apple notes. Body is medium, texture is oily to watery, carbonation is soft to flat. [20171208]

Cask at Pigs Ear 2017 - Hackney. Pours clear, rich brown with a thin, foamy head. The nose holds well roasted malts, burnt butterscotch. Light sweet flavour with moderate dry cocoa, scorched earth bitterness, some dry wood. Light to medium bodied with fine carbonation, pretty good condition. Dry and ashy in the finish, with light coffee notes, more scorched earth. Solid.

ABV: 4.7%. Clear medium orange yellow colour with a average, frothy - fizzy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, sweet malt, moderate hoppy, citrus, pine, fruity hops. Flavor is moderate to light light heavy sweet and bitter with a long duration, citrus, fruity hops, pine, pale malt, sweet malt. Body is medium, texture is oily to watery, carbonation is soft to flat. [20171206]

ABV: 4.8%. Clear dark black brown colour with a small to average, frothy - fizzy and open, good lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, dark malt, roasted, sweet malt, chocolate, wood - woody. Flavor is moderate sweet with a long duration, dark malt, chocolate, roasted, dark roasted. Body is medium, texture is oily, carbonation is soft to flat. [20171206]

Cask @ Salopian, the pub. Pours clear golden amber, white bubbles. Aroma of light grapefruit, malt. Taste similarly quite light, thin with mirage-like grapefruit notes. Bit watery, not great.
