In 2023-2024, we underwent a huge brewery expansion to increase the amount of beer we can produce, as well as improving quality and efficiency.
Our brewhouse is the first of it’s kind in the UK & Europe incorporating 4 new 6000L fermenting vessels, bringing our total to a 40,000L capacity. We have a 3-vessel fully automated brewhouse consisting of a mash conversion vessel, a lauter tun and a kettle whirlpool vessel. These three parts, in their own special ways, improve our brewing methods and increase efficiency.

Cask at cloisters. Pours hazy orange, nose is burnt toffee, melon, cheesy, citrus, taste is sweet, fruity melon, yeasty, light spice.

On tap at Summer Beer Festival, Bow Bar, Edinburgh. Comes with a nice black and opaque color a very nice off-white head. Looks like a huge espresso - and smells like that. Aromas of roasted malts, intense coffee and dark chocolate. Taste is more dark chocolate then strong coffee. Nice malty notes, some nuts. Dry finish with sweet notes..

Cask at the hanging bat... Dark black.. Thin tan lacing...dry chocolate roast malts.. Tiny hintnof oysters nose... Dusty chocolate malts roast... Little thin in body but soft... Soft chocolate roast malts.. Light easy oyster

On cask @ the Hanging Bat. Appearance - opaque black with a nice off white head. Nose - smoke, chocolate and underlying iodine note. Taste - more smoke and tastes of the sea. Chocolate of course, but more subtle. Palate - light to medium bodied and creamy. Fairly balanced finish too. Overall - packs a decent punch considering the session strength.

On keg at the Hanging Bat. Appearance - hazy golden amber with a nice lacy head. Nose - pungent overripe melon. Papaya strikes again. White or rusty coloured grapes. Palate - resin and orange. More of the pungent overripe fruit thing. Overall - lovely. And complex.

On cask at the Hanging Bat. Appearance - cloudy orange. Good head. Nose - oranges and apricots. Taste - more orange. Ripe tropical. And strangely there’s a lavender or rosemary note. Good though. Palate - light bodied with a creamy texture and a long dry finish. Overall - tasty. Looked like a puddle but improved significantly after that.

On cask @ SRAF. Appearance is hazy amber with some head. The nose has passion fruit, mango and plenty of resin. The taste follows this and the resin is not too intrusive. Good.

Third of a cask pint at the Scottish Real Ale Festival in Edinburgh’s Corn Exchange on 7th July 2017. Sold as Wandering #1. Almost black in colour, tanned top. Huge coffee aroma, not so strong in the taste: joined by some chocolate flavours in the sadly, rather thin body.
