Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

16 oz. can. The color is a deep maroon. Aroma shows bright blackberry and current. Flavor is rich with the berries. Slightly tart and puckering finish. Long lasting mixed berry finish.

Sweet massive pure cocoa, massive bourbon, mild to medium spicy 🌶, molasses. Massive sweet and steady bitter. Full body and soft carbonation. This has everything. Full on roast, massive bourbon, with pepper finishing it off. Balance is excellent on this.

Bottle at Maakun’s. Thanks! Black with light tan head. Sweet massive pure cocoa, massive bourbon, mild to medium spicy 🌶, molasses. Massive sweet and steady bitter. Full body and soft carbonation. This has everything. Full on roast, massive bourbon, with pepper finishing it off. Balance is excellent on this. Hunapuhs, Mexican Cake and Bourbon County come to mind. 🖤

Bottle shared at home. Black with fizzy tan head that leaves a nice ring if small dark bubbles. Massive sweet bourbon, vanilla, thick roasted malts, dark chocolate, lots of fruity peppers, chilli heat, molasses, thick toffee, caramel pudding. Huge sweet and roasted bitter. Full bodied with medium chilli heat. Huge bourbon and peppers, fckn lovely. Right up my alley.

16 oz. can. Nose is sour lemon tart wheat and salt. Flavor starts tart wheat then becomes a slaty cracker. True to style with a slightly thinner body. Follows the style characters.

Can at home. Not the prettiest pour in the world that’s for sure, a murky brownish sludgy orange. Nose is veggies, herbal and some fruit. Tastes of tangerine, mango, green onion, white grapes, herbal, toothpaste. Thick bodied. Enjoyed more late run can maybe that’s the abv kicking in n

Can pour in trade with AirForceHops--thanks, Chris. Appearance is opaque black with some dark floaties, nice sparkle at the edges of the glass, finger-width foamy light brown head with poor retention and no lacing. Aroma is roasted malt and milder coffee, hint of earth and dark fruit. Taste follows aroma with roasted malt and milder coffee, hint of dark fruit. Mouthfeel is light side of light-to-medium bodied with frothy texture, lively carbonation and finish as taste. Overall, not complex, coffee is relatively mild and it's overly carbonated so falls short on a number of levels for a style that should be really good.

Bottle, 500 ml from Beerdome. Shared with Max and Miro B. Black with brownish head. Chocolate, cookies, maple, coconut, some coffee, bourbon, quite sweet, intensive flavours. Complex. Oily and viscous. Full bodied. Impressive.
