Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Tap at Sori Taproom, Helsinki. Color is dark brown with very small slightly brownish head. Aromas and flavours: Chili, cacao, dark chocolate and roasted malts. Very heavy and too hot for me. Burns my throath.

There is that Nelson. Bold citrus, White grape, straw, very mild herb. Wonderful blend of hop flavors. Mostly hidden ABV. Real good for the gravity. I love this!

Draught @ Sori Taproom, Helsinki. Smooth, sweetish and slightly roasty with loads of bourbon, vanilla, chili, biscuity pastry notes, spices, toffee, chocolate sauce, cocoa, syrup and maple. Quite intense chili notes here, but also quite tasty with all the bourbony awesomeness. A bit unbalanced but tasty slow sipper.

Draught @ Sori Taproom, Helsinki. Sweet, sticky caramely malty and piney with some grassy hops, citrus and grapefruit. A bit boozy and heavy, doesn't feel super fresh.

Proper spicy, even probably venturing into too hot territory for some. Thick creamy chocolate, maybe 50-50 milk and dark. Silky smooth. Very nice.

Bottle at home . Pours deep amber, nose is caramel, meaty, pine, berries, taste is similar sweet, some almond.

Draft at Smokehaus in Amherst Hazy deep straw in color with a thin white head that dissipates pretty quickly. Earthy spicy floral onion citrus tropical and bread aromas and flavors. Light alcohol warming notes. Pretty nice beer really.

Bottle at home. Pours deep reddish brown, nose is cherry, chocolate, caramel, berries, taste is similar, juicy, sweet, slightly nutty.
