Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bourbon, oak, raisins, fig, with very mild warming after the sip. Gets the belly warm!! Lots of flavor!

Bottle shared with membership group. Opaque dark brown-black with nice viscosity. Aroma is earthy, peaty malt. Taste is mix of earthy, peaty malt, bourbon. Smooth, thick texture, soft carbonation and finish as taste. It all sounds OK but it just doesn't work that great.

330 ml bottle, #278/432. We did the entire Big Bang Willetts together. 11 year is pretty balanced overall. Sweetness is balanced by the mildly spicy Willett bourbon barrel. No alcohol or warming after sip. Real good.

Bottle shared with membership group. Clear maple syrup brown with light viscosity. Aroma is strong caramel, bourbon, vanilla. Taste is well-balanced caramel and bourbon w/vanilla, late fruit. Smooth texture, soft carbonation, slight alcohol harshness, finish as taste.

#381/432. .. 9 year appears to be more spicy then the previous two. Still really great overall flavor. But the Willett is more intense here. Spice and oak are going to in the other direction.

Clear, dark. Small, light-tan head quickly to ring.
Is there a hint of mint or licorice there? Definitely seems like the Willett spice interacting with dark malt creating an herbal spice character. Vanilla and light dark chocolate, but I definitely think it doesnt work as well as the Big Bang does with the Willett. No alcohol noted, though.
Dark chocolate, caramel, salted fudge and a rich, heavily spicy, almost herbal Willett. Wow, that's wacky, but it actually works really well. Minty chocolate and fudge with sweet bourbon and dense chocolate. No alcohol. Really nice, chewy, but not syrupy body and good attenuation. Very pleasantly surprised here!

Clear caramel-amber-chestnut. Dark beige head quickly to ring.
Rich, fruity, lots of raisin, toffee, vanilla and a good, fruity bourbon with light sweetness and light, rounded spice. No alcohol, great attenuation. After a bit of a hiccup from the somewhat oxidized 9 year, this 11 seems to be back on track. Just a hint of tobacco on the very end.
Rich, fruity, earthy with tea and light tobacco. Moderate spice, lots of caramel-toffee-vanilla. Soft and rich, balanced and complex. Rich malt lingering with spice and vanilla.
