A production brewery located in Chicago, we believe in pushing the envelope - looking for what's next. Our canvas is your glass. You can expect interesting new flavor/style/technique mash-ups from us. But never just to be gimmicky. If there's not a clear reason to believe an adjunct or change in SOP will add something to the style we're brewing, we won't do it. But if there is…well, who knows what can happen. Orange with a large white head. Bitter and a bit earthy with piney and fruity hops and a light ginger note. Long finish. Medium body.

Hazy yellow with a medium sized soapy white head. Fruit, citrus and menthol. Long menthol finish. Medium body.

Taster at District Brew Yards. Pours with a foamy head bringing up a light fruit smell. Taste is as advertised some sour watermelon. I'm afraid this doesn't appeal to me, as the sour hits a little too hard. But rish-taking is always welcome.

Draught @ District Brew Yards, Chicago (Aug 2023). Cloudy dark yellow with a small foamy whitish head, hay aroma, high carbonation, mildly bitter grainy taste with faint banana flavor, thin body, long finish. Not a typical hefeweizen, but it's tasty.

Draught, 2020 version @ District Brew Yards, Chicago (Aug 2023). Cloudy reddish brown with a very small frothy beige head, woodsy sharp rum aroma, low carbonation, initially sweet medium bitter woodsy caramel malt taste with strong alcohol undertones, smooth thin body, long finish with some alcohol throat burn at the end. Sweet and striking.

Can @ Avenue Ale House, Oak Park (Nov 2023). Pours cloudy pale yellow with small frothy off-white head, sweet citrus aroma, adequate carbonation, medium bitter citrus peel taste, thin body, long medium bitter finish. Simple but very effective formula for good flavor.

This brown poured a deep amber colour with a creamy brown head. Nice lacing. Scents include a little cocoa, caramel, light coffee and a bit of ripe fruit. First swig was a little boozy at 6.9, it roasty delicious. Flavours of cacao, ripe fruit, tea and brown sugar. Finish is roasty with light hop and mild coffee flavours lingering.
