A production brewery located in Chicago, we believe in pushing the envelope - looking for what's next. Our canvas is your glass. You can expect interesting new flavor/style/technique mash-ups from us. But never just to be gimmicky. If there's not a clear reason to believe an adjunct or change in SOP will add something to the style we're brewing, we won't do it. But if there is…well, who knows what can happen. 12 ounce can into pint glass, no can dating. Pours lightly hazy medium golden yellow yellow color with a 1-2 finger dense and rocky off white head with fantastic retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of juicy pineapple, tangerine, lemon, grapefruit, peach, passion fruit, mango, melon, citrus peel/rind, light pepper/pine, wheat, cracker, white bread dough, herbal, and floral/grassy earthiness. Nice and pleasant aromas with good balance and complexity of pineapples, citrus/fruity/tropical/earthy hops, and moderate bready malt notes; with solid strength. Taste of juicy pineapple, tangerine, lemon, grapefruit, peach, passion fruit, mango, melon, citrus peel/rind, light pepper, pine, wheat, cracker, white bread dough, herbal, and floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, grassy, peppery bitterness on the finish. Lingering notes of pineapple, tangerine, lemon, grapefruit, peach, passion fruit, mango, melon, citrus peel/rind, pepper, pine, wheat, cracker, white bread dough, and herbal/floral/grassy earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of pineapples, citrus/fruity/tropical/earthy hops, and moderate bready malt flavors; with a nice malt/bitterness balance. Moderately increasing dryness from bitterness. Medium carbonation and light-medium body; with a very smooth, moderately crisp, bready/grainy, and sticky/resinous/rindy balanced mouthfeel that is good. Some lingering hop astringency, but not too overwhelming. Zero warming alcohol as expected of 4.5%. Overall this is a very nice fruited session IPA. All around nice complexity, robustness, and balance of pineapples, citrus/fruity/tropical/earthy hops, and moderate bready malt flavors; very smooth, crisp, and pretty refreshing to drink; despite the increasingly bitter/resinous/drying finish. Not overly aggressive. Very flavorful and not watery for the ABV. Nice balance of juicy pineapples/Citra hops, some dank/earthy notes; with a nice malt backbone for the ABV. No residual sweetness. A very enjoyable offering, and well made style example.

Taste of big grapefruit, tangerine, lemon, peach, pear, pineapple, apricot, passion fruit, papaya, mango, melon, berry, citrus peel/rind, light pepper, pine, wheat, toasted biscuit, honey, light caramel, herbal, and floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, grassy, spicy bitterness on the finish. Lingering notes of grapefruit, tangerine, lemon, peach, pear, pineapple, apricot, passion fruit, papaya, mango, melon, berry, citrus peel/rind, light pepper, pine, wheat, toasted biscuit, honey, light caramel, and herbal/floral/grassy earthiness on the finish for a good bit. Great complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity yeast, and bready malt flavors; with a nice malt/bitterness balance, and no cloying/astringent flavors after the finish. Lightly increasing dryness from lingering bitterness. Medium carbonation and medium-plus body; with a very smooth, creamy/bready/grainy, and fairly sticky mouthfeel that is nice. Slight resins/rinds lingering after the finish. Minimal warming alcohol for 6.3%. Overall this is a delicious IPA. All around nice complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity yeast, and bready malt flavors; very smooth and easy to drink with the mellowly bitter/drying finish, pretty soft feeling. Centennial, Simcoe, and Mosaic. Very juicy and fairy dank/earthy hop complexity with fruity yeast; nice bready malt backbone, and not overly sweet/heavy from lingering dryness. A very enjoyable offering, and well made style example. Kind of NEIPA-like with soft/creamy feel.

Ok, another stupid IPA in a can, must be a billion of them. Pale yellow with big creamy head. Veggie off sweet hop nose. Taste is big and bitter. Who wants to put up with big and bitter with out alky? Yes, big veggie fest going on with these stronger hopped low alky so called IPA. All the bad attributes of IPA without the buzz and i'm not going to drink another, thank you. Not a drain pour. Tastes just like any other IPA. Terribly astrigently on style. So, like IPA? Interpretation: Put this on your bucket list. BTW, I didn't even know it had pineapple in it! hehehehehhh.

Taste of big grapefruit, tangerine, lemon, peach, pear, pineapple, ginger, mango, melon, citrus peel/rind, pepper, pine, caramel, toasted biscuit, light nuttiness, herbal, and floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, grassy bitterness; and galangal spiciness on the finish. Lingering notes of grapefruit, tangerine, lemon, peach, pear, pineapple, ginger, mango, melon, citrus peel/rind, pepper, pine, caramel, toasted biscuit, light nuttiness, and herbal/floral/grassy earthiness on the finish for a while. Very nice complexity, robustness, and balance of citrus/fruity/earthy hops, galangal spice, and dark/bready malt flavors; with a great malt/bitter/spiciness balance; and zero cloying/astringent flavors after the finish. Lightly increasing dryness from lingering bitterness/spiciness. Medium carbonation and body; with a very smooth, moderately creamy/bready/sticky, and slightly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol for 5.9%. Mildly increasing spice heat after the finish. Overall this is a delicious American pale ale. All around nice complexity, robustness, and balance of citrus/fruity/earthy hops, galangal spice, and dark/bready malt flavors; very smooth and pretty refreshing to drink with the mellowly bitter/drying finish, never aggressive. Well restrained on galangal spice, not overwhelming to the base style. Nice hop profile from Chinook, Simcoe, Ahtanum, Amarillo, and Citra. Well balanced juicy/dank hop complexity, with a nice bready Munich/Victory malt backbone. Not overly sweet. A very enjoyable offering, and spot on style example.

12oz can. Unfiltered dulled orange body. Creamy, steady, off-white head. The pistachio is a great addition to a Cream Ale, accentuating the vanilla tones. Quite a solid Cream Ale. Refreshing, super sessionable. Good stuff, though there seem to be some underlying aroma issues that get covered up with the vanilla.

Can, many thanks FinnIckler. Hazy amber color with eggshell head. Aroma is chocolate, molasses. Taste is chocolate, lacto, caramel. Medium carbonation. Quite drinkable, surprisingly good!

Can from binny’s. Pours brown. Nose is caramel, chocolate. Palate is scotch, caramel, bread, toffee. Easy to drink for 10%. Pretty nice.

Can. Pours dark brown with a soft head. Aroma is barrel and booze, vanilla, chocolate, light acetone. Body is medium, strongly roasted, coffee and chocolate, liquorice, a lot lighter and simpler than the Alesmith Wee Heavy. Good!

Dark brown with little beige head. Aroma is coffee, fresh brewed coffee. No chocolate, not very deep. Taste is sweet caramel at first (brown sugar maybe) with sudden coffee bitterness later. Very balanced. Fuck yeah! All styles!

Not too much smoke in the nose, to which I say thank goodness this time around. Instead, just a hint of peat under a light nose of cherry leather. Opaque redish brown in a small goblet. Taste is a bit more malty and almost creamier than almost any Scottish style brew I’ve had. Thick mouthfeel. With a nearly chewy texture. Dark dried cherry predominates, a bit of treacle sweetness, with just a hint of English hop. I keep looking for lighter sumer beer specials this June, but these wonderful heavy brews keep turning up.
