A production brewery located in Chicago, we believe in pushing the envelope - looking for what's next. Our canvas is your glass. You can expect interesting new flavor/style/technique mash-ups from us. But never just to be gimmicky. If there's not a clear reason to believe an adjunct or change in SOP will add something to the style we're brewing, we won't do it. But if there is…well, who knows what can happen. Sampled from the tap at District Brew Yard. Pours a slightly hazy pinkish red with a near white head that dissipates to the edges. Aroma has earthy grains and yogurt with blackberry supporting. Flavor is more sour blackberry forward with a tartness that’s grows and yogurt backing.

Sampled from the tap at District Brew Yards. Pours a clear brown with a bright amber hue and a near white head that dissipates to the edges. Aroma has sweet grains and rye barrel with toffee and caramel supporting. Flavor is rye barrel and toffee forward with sweet grains and caramel backing.

Sampled from the tap at District Brew Yards. Pours a clear crisp gold with a white head that dissipates to the edges. Aroma has a nice grass with earthy grains and a bit of straw supporting. Flavor combines grass and straw well with a touch of growing grains.

Sampled from the tap at District Brew Yards. Pours a slightly hazy light yellow with a light orange hue and a white head that dissipates slowly to the edges. Aroma has a nice dry citrus note with a touch of papaya with grass and light grain supporting. Flavor has earthy and dry citrus with a bit of light grain backing.

Sampled from at District Brew Yards. Pours a clear orange gold with a white head that dissipates to the edges. Aroma has earthy citrus rind and grass with light grains and a slight bread note underlying. Flavor has pre ripe citrus and citrus rind with light sweet grains backing.

12 oz. can from Binny's. The label refers to this as Extra Circus III, and the hops are changed to Mosaic and Bravo. Kind of a pineapple nose after letting the pour relax. Hazy gold color under a sudsy head. The dryness of this brew is more apparent versus my experience of other Brut IPA's. There is still some chewy malt, but it's been rather thoroughly fermented out. Hops are giving me the usual pine resin, delivered nicely with the prickles of effervescence. So it does have a bit of champagne quality.

Can. A- Citrus, melon, mild pine. A- Gold color clear liquid, white head. T- Bitter, pineapple, citrus, caramel. P- Medium body, average texture, average carbonation, bitter finish. O- I always forget session IPA is for ABV not necessarily IBU. This was fairly bitter and forward for a session. Lots of pineapple and some pine and caramel malt as well. Okay.

Smells like fruity citrus perfume. Looks slightly hazy. Taste is big nasty IPA all the way. What else can be said. If it smells like IPA, tastes like IPA and looks like IPA, what else is it?
