Description
Propolis was established in June of 2012 with the sole intent to produce high-quality handcrafted herbal ales inspired by Old World tradition, local resources and the rhythms of nature. Our ales are brewed with various wild-crafted herbs and are seasonally based. Many of our Ales blend several styles and are hard to classify by traditional beer guidelines. We are primarily inspired by the farmhouse tradition of France and Belgium, as well as Old World Ales that no longer exist. We are artists and scientists at heart and we aspire to challenge the norm.

750 ml bottle at ahre, thanks to Toby. Pi kish, golden, wispy head. Sweet, tart aroma, floral. Taste brings a lot of dryness, roses, herbal notes. Soapy.

750ml bottle thanks to Toby. Pours out crisp golden topped with a white head. Nose is sage, spice some honey. Taste is more of the nice spice lots of floral notes and some cereal.

Bottle - Candied and perfumy peach. Cloudy gold with a decent white head. Light sour notes and just a touch of stone fruit. Long finish.

Cloudy golden colour with compact head. Fruity aroma, peach, apricot. Smooth mouthfeel, light acidity, delicate strawberry, quite strong winy notes.

Cloudy golden colour. Mild aroma of peach, very light funk. Good body strength, moderately acidic, juicy, with peach and apricot, very light acetic feeling.

375ml bottle at Farees'. Pours a murky dirty golden with a white head. Aroma is funky with stone fruits. Similar taste with moderate acidity. Not bad.

Bottle - Fruity and some white grape with light funk. Cloudy gold with a nice white head. Soured and fruity with some nice light funk. Pleasant.

Tasting at Ferris'
Cloudy light amber colour. The aroma is vinous, fruity, a bit perfumy, with light acidity. Good body strength, mellow, mildly sweet, good malt base, moderate sourness, very juicy.

Bottle - Sour caramel, plum and some cherry. Cloudy copper with no head. Soured plum, nice light barrel and a funky finish. Carbonation just isn’t there or else it would be great.
