Description
Propolis was established in June of 2012 with the sole intent to produce high-quality handcrafted herbal ales inspired by Old World tradition, local resources and the rhythms of nature. Our ales are brewed with various wild-crafted herbs and are seasonally based. Many of our Ales blend several styles and are hard to classify by traditional beer guidelines. We are primarily inspired by the farmhouse tradition of France and Belgium, as well as Old World Ales that no longer exist. We are artists and scientists at heart and we aspire to challenge the norm.

Draft. Hazy golden beer with a cream head. Yeast and light lemon aroma with a floral note. Lemon and floral note flavor with tartness. Medium bodied. Lemon and herbal notes linger with tartness/light sourness.

Bottle. Pours a clear dull amber gold with a thin white head that dissipates nearly completely. Aroma has lots of Syrah grape and tart red fruits with oak and a hint of spruce underlying. Flavor has acidic red fruits and a bit of Syrah with light spruce and some oak supporting.

Bottle thanks to Sarah! Pours a clear gold with a white head that dissipates to the edges. Aroma is full of flora with light fruits, grass and a sweet grain backbone supporting. Flavor has light tart fruits and a lot of flora with sweet grains and almost a bit of honey coming through.

2015 bottle consumed in February 2019 pours a translucent honey gold with lots of fluffy white head. Nose is like rolling in a dandelion patch, floral with honey and patchouli, there's an earthy note too like top soil, straw, herbs, lemon juice. Flavor has some grist and stale bread, flower petals, lemon, lavender, cheese cloth. Finishes dry, herbal. Aged well.

Bottle thanks to Sarah! Pours a clear gold with visible carbonation and a white head that dissipates to the edges. Aroma has strawberry and light funk with a white head that dissipates to the edges. Flavor has tart rhubarb and light strawberry with a bit of funk and wine barrel supporting.

50cl bottle pours a dark gold with some fluffy, white head. Nose has honey, lime, grape, oak, some barrel. Flavor has honey, some white pepper, some tart notes like lime. Finishes a bit hot with something hard to characterize. Maybe chile? Fish pepper? Bit of tartness too.

375ml. Real quality offering. Funky sour mixed fermentation. White wine, oak, white grape. Really has the classical lemon-lime tones. One of the best, if not the best, beers of my 2018 NW trip. World Class.
