Description
Propolis was established in June of 2012 with the sole intent to produce high-quality handcrafted herbal ales inspired by Old World tradition, local resources and the rhythms of nature. Our ales are brewed with various wild-crafted herbs and are seasonally based. Many of our Ales blend several styles and are hard to classify by traditional beer guidelines. We are primarily inspired by the farmhouse tradition of France and Belgium, as well as Old World Ales that no longer exist. We are artists and scientists at heart and we aspire to challenge the norm.

Slight haze, thin head. This has a nice mellow spruce and a nice, woody tartness. Tasty.

Dull, light tan, with no head. Hazy. Has a barrelly nose, bit bretty. Hoppy, has a splash of acidity. Nice brew.

Light gold, though quite dull. Thin head. Light spruce and herbal notes. Fresh, fruity, good body, nice finishing tartness. Complex, beautiful.

Dull, tan, not much head. Has a sort of spicy, rosemary nose. Tart, with nice spiciness, again sort of herbal, rosemary, that sort of thing. Doesn't look like much but it's a nice beer.

On tap at St. Augustine's, pours a clear pale golden with a small white head. Aroma brings out earthy notes, saison yeast and light brett. Flavour is nice and grainy, with toasted brett, earthy notes and light spiciness from the yeast. Earthy and funky finish, with a nice spice. Very solid.

On tap at St. Augustine's, pours a clear blonde with a small white head. Aroma brings out lots of spicy yeast, farmhouse funk and some earth. Flavour is very dry and spicy, with saison yeast, rustic notes and earth. Dry and spicy palate on the finish. Nicely done.

On tap at St. Augustine's, pours a deep dark mahogany with a tiny head. Aroma brings out lots of licorice, some earth and light farmhouse notes. Flavour is very odd, with lots of chicory upfront, followed by farmhouse notes and light cocoa. Very funky and earthy. It's unusual but good.

On tap at St. Augustine's, pours a dark chestnut brown with a small off-white head. Aroma brings out lots of toasted chestnuts, earthy notes and Belgian yeast. Flavour is loaded with earthy notes, with light Belgian yeast and toasted nuts. Earthy and funky. It's decent.

Flavour is very earthy and somewhat spicy, with barnyard funk, brett, saison yeast and earthy spiciness. Nicely balanced, with a good yeast profile showcasing. Very good.
