Bottle from Matsugasaki. Brilliantly clear and shiny. Big fruit nose, strawberry, citrus, pear, light apricot, ginjo-ka spicing, koji, rice. Flavor is more strawberry, lemon and orange, black pepper, spicy ginger, stewed pears. Massively fruity and super elegant. Definitely lives up to its reputation.

Taster at Matsugasaki. Clear. Rich, fruity nose, tons of ginjo-ka, spicy, citrus, stone fruit, melon. Rich, full, fruity flavor. This is a lovely, spicy daigin, fresh and delicious. Light and soft on the palate, with a super clean finish.

Bottle pour at Matsugasaki. Estery nose, full of banana and somewhat reminiscent of a hefeweizen. Melon notes too. Sweet and fruity, lots of banana, estery, like the Easter banana candies I got as a kid. Rather heavy. Interesting but not great, and far behind the strawberry yeast.

Pour at Komachi. Rich, ricey nose, with melon and ripe stone fruits, peaches. Sweet, but balanced, very fruity, estery. Rich and full

Glass at Komachi. Flowery, fruity nose, rice and koji spice. Spicy, fruity flavor, pears, peaches. reasonably dry but not as \"cho\" dry as expected. Nice.

Bone dry one the tongue with an alcohol burn on the back.
Rose water, alcohol, floral & grain tastes.

720 ml bottle from Furusato Nozei. Served chilled in a wine glass. Pours a shiny, icy, clear with bubbles from the velocity. The nose erupts in flowery, fruity goodness. Citrus, apples, stone fruits, spicy ginjo-ka. In the flavor I sense the grassy, herbal, slightly honeyed sweetness of abelia blossoms, whence came the yeast. Also citrus, apple, and flower nectar, with a slightly bittersweet finish. Interesting but sweet and then bitter.

720 ml bottle. Opened last week, then back in the fridge. Lovely, flowery and fruity ginjo-ka nose, with citrus, apple, pea, spices. Sweet and fruity, citrus, green apple, pear, flowers, something a bit tropical. Very complex flavors. Also peppery, spicy ginjo-ka all the way. Silky smooth. Fabulous. Massive fruitiness.

720 ml bottle, as Yamahai Junmai. Yellowish, clear, water. Nose is peach, melon, citrus with light rice and not much yamahai acidity. This comes out more in the flavor, with creamy rice, fruit, maybe something like marigolds too. Soft, silky and light. Nice.

720 ml bottle from Furusato Nozei. Rich rice and koji nose, light citrus, melon, flowers. Clear and viscous. Light strawberry, booze, rice. Slightly reminiscent of rubbing alcohol. Light peach, melon, sweet orange. Too boozy but interesting. Two days later the booziness was way down, opening the way for sweet, juicy strawberry notes to better emered. 3.3-3.6.
