Description
Founder of Dot Brew, Shane Kelly, has made a name for both himself and his brand over the last few years through a keen passion and love for experimentation when it comes to his brews, most notably in the form of barrel ageing and hybrid styles. The Dublin based brewer has carved out quite a niche, developing a unique style and approach which has helped put Dot Brew at the forefront of the Irish Craft Beer scene. While the beers are brewed in various microbreweries in and around Dublin, they are then brought home to Dolphin’s Barn. The site is home to about 50 barrels in a small warehouse which Kelly refers to as his ‘spice rack’, with casks ranging from French oak, Mexican tequila and American bourbon, to name but a few.

Draught. Black with a medium head. Aroma of booze and malt. Flavour is a lot of barrel and less of milk stout. Warm booze but lacks balance.

Bottle. Black pour. Aroma of red grape, vineus oak, chocolate, booze and licorice. Taste of licorice, malt, red fruit, chocolate, oak, red grape and some yeast. Strange, this tastes more like red wine ba than bourbon. Solid.

330ml bottle. Jet black colour with small to average, frothy to creamy, half-way lasting, minimally lacing, beige head. Roasty, dark malty aroma, notes of dark chocolate, hints of cocoa, fruity hoppy hints of white grapes, gooseberry, green apple, cautious, woody, oaky Bourbon overtones. Taste is minimally sweet, roasty dark malty, slightly chocolately, slightly vinous, fruity hoppy, hints of cocoa, white grapes, gooseberry, a touch of liquorice as well as a touch of oak with tannic overtones, a very cautious touch of Bourbon; minimally warming, alcoholic finish. The Bourbon BA notes are well embedded if not a bit too cautious; the woody- and fruitiness give the impression that parts of the beer could have been matured in White Wine barrels as well. Slightly oily texture, smooth and soft palate. Very nice.

Can @Bir&Fud Bottega (Rome). Dorata, appena torbida, schiuma bianca media. Al naso note floreali e citriche, leggermente soapy. In bocca è amara leggera, fa dell'equilibrio la sua arma migliore, ma non lascia il segno. Corpo leggero, carbonazione media. Insomma.

Draught, half pint. @«Big Grill Festival 2019», Dublin (Ireland). 17/08/2019. Slightly hazy yellow colour with a mrfium white head. Aroma is wheat, fliral hopd and grapefruit. Taste is medium flotal and fresh fruity. Medium bitter finish. Next one please!

Bottle at home in Hackney - maybe picked up at Eebria. Pours clear honey-gold with a modest, foamy white head. Not bad, a touch on the sweet side, with some light doughy biscuits, tangerine meringue, soft yeast. Medium bodied with fine to average carbonation. Sweet finish, more bready malts, a little alcohol, a nip of acidity. Decent overall.

ABV: 6.4%. Clear dark black brown colour with a large, frothy, good lacing, mostly lasting, off-white to light beige head. Aroma is moderate malty, roasted, chocolate, light rye - oat, moderate to heavy hoppy, pine, citrus, grapefruit. Flavor is moderate to light heavy sweet and bitter with a long duration, fruity hops, citrus, stone fruit, dark malt, coffee - chocolate, rye - oat. Body is medium, texture is oily, carbonation is soft. [20190731]
