Every Black Project beer is fermented with microbes captured from the local environment via a coolship or foraged from nature. We believe this creates a beer that is unrivaled in complexity. Our beers are intended to have a sense of place, or terroir. No matter how hard one tried to, our beer cannot be replicated outside of our brewery. In fact, our microbe cultures are purposefully allowed to evolve from batch to batch, creating variations and interesting twists from different releases of the same beer.
We are meticulous about designing recipes and processes that will allow nature to take over and create beers unrivaled in their beauty and complexity. Through experimentation and research, we are continuously developing new and different techniques for use with wild and spontaneous fermentation.
We are not and do not have any intention of being a Lambic brewery. We use science and experimentation to find which processes and ingredients we want and often use that in parallel to traditional Lambic producers, however, we maintain no strict adherence to tradition for tradition's sake. While we do craft several of our beers with strict adherence to traditional Belgian processes, these beers are not and should not be called "Lambic" and "Gueuze," as we are outside of the Pajottenland region of Belgium. Instead they themselves are a form of experimentation with local terroir. Spontaneous fermentation is merely a starting point and core of many of our beers, from there our research and development extends much beyond the scope of the great Belgian brewers and blenders.

As Cygnus Blend A redish cloudy color, small white head. smells a bit rubbery, musty, some cherry notes, light marzipan, nutty, leathery. very nice smell. medium to full body, light carbonation. slick mouthfeel. tastes citric, cherries, bit grassy, marzipan, nutty, bit rubbery. finishes dry and lightly sour with notes of cherries, marzipan and some nutty notes. very very nice one, light rubbery notes that do not fit so well. 8, 4, 8, 4, 16: 4 Cygnus Blend B 0,05l from tap at MBCC Green Session 2018. bourdeaux like color, small white head. smells earthy, grassy, some cherries, peppery, lightly grassy. nice smell. medium to full body, light carbonation, slick mouthfeel. tastes of cherries, bit musty, lightly lactic, marzipan, bit nutty, earthy, some citrus. finishes rather dry and medium sour with notes of cherries, marzipan and some nutty notes. very nice one, liked this a bit more than the blend a. blend a has nicer smell but blend b has just a nicer and fuller cherry taste. very good stuff 7, 4, 8, 4, 18: 4.1

0,05l from tap at MBCC Green Session 2018. light yellow cloudy oclor, small white head. smells of peach, some apricots, light marzipan, bit citric. very nice smell. medium to full body, light carbonation, slick mouthfeel. tastes of peach, apricots, citrus, grassy, bit lactic, earthy. finishes rather dry and medium sour with notes of peach, apricot and light lactic notes. very very nice one, lovely fruit notes, very good to drink 8, 4, 8, 4, 17

Bottle, Cherry B. Hazy ruby color with pink head. Aroma is almonds, cocktail cherries. Taste is almonds, amaretto, a bit sweet. Silky mouthfeel with fizzy carbonation. Good!

Tap. Hazy golden color with white head. Aroma is apricot, mango, peach, salty, wheat, fresh and juicy. Taste is the same, nice salt. Oily mouthfeel with low carbonation. Good!

Bottle @MBCC2018, Yellow Session. Clear light golden, no head. Fruity, yeasty aroma, malty with light apple and aniseseed aroma. Sour flavour, fruity, citrusy. Very light anise.

0,05l from bottle at MBCC Red Session 2018. bourdeaux murky like color, small white head. smells of joghurt, earthy, some currant notes, some musty berry notes, pomegranate. nice smell. medium to full body, light carbonation, slick mouthfeel. tastes earthy, grassy, citric, bit musty, some pomegranate, berry notes, very lightly joghurty, lactic, peppery. finishes dry and medium sour with notes of earth, grass and some berry notes. rather nice one, fruit notes are rather muddled not bad but also not super good 7, 4, 8, 3, 15

Tap @MBCC2018, Green Session. Cloudy yellow, no head. Apricot and mango aroma. Peach and apricot flavour. Sourish.

Bottle. Clear golden color with white head. Aroma is apricot, wheat, funky. Taste is peach and apricot, yoghurt, funky, very nice and jammy. Oily mouthfeel with medium carbonation. Very good! I happened to try 2 pours of this during MBCC. One must have been quite the end of a bottle, it was quite muddled and smelled a bit cheese-like. The second time where the bottle pour I got was one of the first from the bottle, I liked it much better.

Draft. A pink beer with no head. The aroma has notes of cherries, funk, and brett. The flavor is sour with notes of funk, malt, cherries, and vinegar, leading to a tart finish.
