Black Project Spontaneous & Wild Ales is the passion project of James Howat, owner, brewer, and blender; of what was formerly Former Future Brewing Company. The brewery began production in January 2014 and won two bronze medals and one silver medal for their coolship ales (Category: Experimental, Subcategory: Wild Ales) at The Great American Beer Festival in 2014, 2015, and 2017. In 2016, Black Project expanded production with a small addition to the property which allowed for the expansion of their barrel program. This allowed the brewery to evolve from Former Future Brewing Company to only serving Black Project beers.

Every Black Project beer is fermented with microbes captured from the local environment via a coolship or foraged from nature. We believe this creates a beer that is unrivaled in complexity. Our beers are intended to have a sense of place, or terroir. No matter how hard one tried to, our beer cannot be replicated outside of our brewery. In fact, our microbe cultures are purposefully allowed to evolve from batch to batch, creating variations and interesting twists from different releases of the same beer.

We are meticulous about designing recipes and processes that will allow nature to take over and create beers unrivaled in their beauty and complexity. Through experimentation and research, we are continuously developing new and different techniques for use with wild and spontaneous fermentation.

We are not and do not have any intention of being a Lambic brewery. We use science and experimentation to find which processes and ingredients we want and often use that in parallel to traditional Lambic producers, however, we maintain no strict adherence to tradition for tradition's sake. While we do craft several of our beers with strict adherence to traditional Belgian processes, these beers are not and should not be called "Lambic" and "Gueuze," as we are outside of the Pajottenland region of Belgium. Instead they themselves are a form of experimentation with local terroir. Spontaneous fermentation is merely a starting point and core of many of our beers, from there our research and development extends much beyond the scope of the great Belgian brewers and blenders.

Deep, crimson-tinged pinkish-gold body shows high clarity and a pink-tinted, beige head atop with moderate retention.
Cherry pit adds a healthy dose of black pepper and very light medicinal character (in a good way) as the farmy funk of the lambic rises up to complement the fruit very nicely. Dry, fleshy-pulp, well-attenuated juices with lots of malic acid remaining and a hint of citrus mixing in with the pepper. These are cherries done perfectly/near-perfectly. I’m not normally in to fruit lambics nearly as much as the straight gueuze/lambic, feeling that at best, it adds a pleasant fruit flavor but still detracts somewhat from the beer elements of the lambic. It’s difficult to argue with that here, as the funk still comes through very nicely and is bolstered/deepened by the acidity and pit/skin character. No alcohol or flaw.
In the mouth it’s very tart, with high attenuation and more interesting fruit notes of black pepper, leather, medicine, vanilla and such. The funk element mixes in nicely, as well and the carbonation is tight, with a malty/wheaty texture that is soft and drinkable. Fantastic stuff, encouraged to see more from them.

Wow, we really are just doin’ it to every style with coffee these days....I love coffee, I love lambic....but I also love coffee and love orange juice...and I certainly don’t want coffee blended orange juice. Obviously this comes off better than coffee/OJ blend, but I’m still a bit skeptical. It pours a drab, brassy-amber, with good clarity and a small, beige head atop.
Coffee very strong initially, as it’s wont to be, though there’s the maltiness of the Oxcart behind it, as well as some of the funk and light acidity from the critters. Really difficult to evaluate and while I don’t think it’s muddled or completely dominated by the coffee, I also don’t think the coffee is adding anything beneficial here. Would rather just have the lambic in its pure, unadulterated glory. That being said, if you look at this as a fruit lambic (the coffee being the pit or seed of the coffee plant fruit), I guess it works ok? This is one time where I think a very highly acidic coffee might complement the lambic better, mimicking the acidity of a cherry or raspberry.
The texture is soft, with good, natural carbonation and a light slickness from both oak and coffee. Fairly well-balanced and a moderate amount of funk and acid get through, with lots of chocolate, bean and light acidity from the coffee. Definitely one that demands a larger sample, though I can say that I appreciate the overall level of coffee here.

Brilliant golden-bronze body shows high clarity and a small-to-medium white head atop with moderate retention.
Quite funky and fun in the nose, with sweat, barnyard/sulphur and light to moderate oak suggestions. It’s all backed by a healthy malt/wheat character (and the oak balances, as well). Pretty interesting and it’s cool that it’s not just a noseful of acetic/lactic acid. Very fruity and with soft, brett suggestions. As it warms, more oak, light honey and increasing barnyard emerges. Reminds me a lot of older Cuvee Rene or maybe even a more lighthearted Tilquin/Girardin. No alcohol or flaw and no green apple. Would like a little less oak and malt character, as well as a little more lactic/brett notes, but this poopy barnyard is really nice.
Similar in the mouth, it’s got a full body for a lambic replete with oak tannin, wheat and malt sugar. Not sweet, really, but not one of the more dry lambics I’ve had, either. Hay, sweat, cheese, barnyard and lightly toasted oak all seem quite harmonious, with soft lactic-brett acids adding moderate tartness (like the newer Cantillon/3Fs, this is not terribly sour). Good fruitiness without any green apple. Quite nice and would imagine this will improve nicely in the next few years as it dries out and develops some more brett intricacies. Rating is for a Lambic - Gueuze, not a Sour/Wild.

750mL bottle, pours a cloudy opaque dirty orange with a small white head. Aroma brings out lots of stone fruits, light funk and moderate tartness. Flavour is along the same lines, with lots of peachy notes, medium tartness and moderate funk. Acidity is moderate. Nicely blended and well-rounded. Excellent.

Black Project Ejector. 6% A cloudy gold with 1cm of foam. Great nelson nose with a bready tart sour aroma. Clean sour flavor with tart passionfruit and light wheat. Great soft carbonation.really really good stuff, thanks for introducing me to this brewery wchesser!

Bottle thanks to Sherrice. Pours a cloudy pink with small white head that diminishes to nothing. The aroma is strong funk, grape, cherry skin, stone fruit. Thin mouth, funky, grape, vinous, light oak, very good.

Bottle. Pours clear ruby orange, small off-white head, dissipates fairly quickly, some lacing. Aroma is funk forward, bretty basement and oak, berries. Flavor is medium funk, light tart, oak, bourbon, sweat socks, brett and berries. Light body, high carbonation.

Bottle sample at a tasting at Dancing Camel. Thanks Sarah. Batch #1. Cloudy yellow. Nice aroma of funk, vinegar, fruits. Sour flavor, fruity, with some vinegar and some funk. Medium-bodied, lively carbonation. Very good.
