Description
I was originally an arable farmer but diversified into cider making back in 2011 when someone wrote to me asking if I had any apple trees, as they would like to buy the fruit to make into juice. I decided to plant some trees for them. While I was planning the new orchard, the thought occurred to me to try making make my own cider. So I visited the West of England and took some advice from cider makers down there.

I tried out my first batch of cider on a home-made press using apples from neighbouring gardens and from the roadside … admittedly not the best but I had got the bug. So my new orchard was planted with a blend of cider apples and dessert fruit – a blend I still use to this day. The business has continued to grow since then, and I use apples from our own orchards as well as others from Northamptonshire and Herefordshire farmers.

Saxby’s ethos is to produce high quality, authentic cider using fruit from English trees embracing both traditional and modern techniques, for a flavour that can be enjoyed by everyone. Cider doesn’t have to be a large production line drink. Neither does it have to be bland or too niche for the masses.

NB - Whilst the postal Town is Wellingborough (Northants) the cidery is located across the county border in the village of Farndish (Bedfordshire).

Bottle shared with JFE 09.11.18. Clear pale straw colour. No head. Fine aroma of fresh apples and cider. Complex tast, with dry apple cider and apple zest. Slightly bitter. Rhubarb acidity in aftertaste. Very quaffable!

16/10/2018. Bottle at the Admiral Hornblower, Oakham. Pours golden amber with no head. Aroma of sweet strawberry purée and apple. Medium plus sweetness, minimal bitterness or tartness. Moderate body, sticky texture, above average carbonation. Not the best in this series.

Bottle @ Admiral Hornblower, Oakham. Clear pale yellow with a white head. Aroma is sweet apples and rhubarb. Flavor is medium sweet. Light dry finish. Much better than expected. 161018

Bottle at home, 15/09/18. Pale blonde with a moderate off white cap of bubbles. Nose is bitter sweet apple, grass, grains, straw. Taste comprises sweet appple peel, straw, caramel, grass. Medium bodied, fine carbonation, semi drying close. Ok.

12/9/2018. Bottle at The Freston Boot. Pours fizzy golden colour with minimal white head. Aroma of apples, rhubarb and light caramel. Moderate sweetness and tartness. Very nice rhubarb to taste. Moderate body, slight oily texture, average carbonation. Quite enjoyable.

500 ml bottle, from Det Gode Brygg, Kvadrat. ABV is, unsurprisingly, 3.9%. Very pale and clear straw colour, moderately sparkling. Distinct aroma of cider apples, apple peel and sulphites, hints of oak. The flavour is moderately sweet (not as sweet as I feared), light bodied of course, but with fairly decent notes of cider apples and eating apples, a hint of sulphites.
