Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

It is what they aimed for it to be. Very light lager, with a moderate corn sweet streak backed up by notes of white bread, grass, and a hard-to-describe fruitiness underneath. Texture is perfect, but so many better craft macro-style lagers are available these days.

All-galaxy IPA offers a good bit of orange slices, citrus zest, peach, and pine, with a mineral bitterness in the middle and a lingering citrus pith finish. No malt presence whatsoever, so the galaxies don’t really have any accent; pretty much a one-note pint.

Super sweet, like liquid fudge, just chocolate on chocolate on chocolate, with a bright cherry acidity underneath backed up by molasses and maybe, just maybe, a little coffee. So rich and indulgent. Too much for me.

Very up front with its booziness; no mistaking the ABV. Starts with a mix of floral sweetness and citrus zest, before adding grapefruit and lemongrass to the middle. Finishes with a modest vegetal note coupled with sage and a little sauvignon blanc. Complex, which is good, but the alcohol is definitely not subtle, and the slight note of wet leaves and chive aren't my favorite. Not bad.

Very dank, with a resinous baseline underneath grapefruit zest, chive, pine, tart berry, and a sourdough-like yeastiness. Finishes dry and bitter, with a lingering streak of pine, fresh nugs, and citrus. A bit cluttered, and the vegetal/bready notes aren’t altogether pleasant.
