WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Typical low-ABV hazy IPA, front-loaded with bright, juicy hop notes, bursting with citrus and tropical fruit, and then dissipates into nothingness on the back end. Makes me sound like a broken record, but this is half a beer.

Clear orange blond beer, small creamy off-white head, little stable, a bit adhesive. Aroma: tropical fruits, juicy, mango, a bit dank, sweet impression. MF:ok carbon, medium body. Taste: sweet start, hoppy, resinous, grapefruit, citrus notes, a bit sweet. Aftertaste: good bitterness, lots of tropical fruits, juicy, mango, very nice!

Aroma has dank citrus and light onion with a hint of dank tropical fruit and a touch of sweet bread underlying. Flavor has a nice dank citrus with some light onion, dank tropical fruit and a light sweet grain backbone.

Not as sweet as most BI stouts, which is good. Coconut is very present, as is a dark chocolate backbone and slowly surfacing bourbon. Berry tartness on the back end seems a bit out of place, but the lingering notes of whiskey and coconut make for a nice finish. Oak comes on in the fade, bringing a bitter swipe tinged with vanilla. Tasty beer.
