WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

Tasty hazy IPA, dripping with mango, orange, citrus punch, and white grape, followed by a gentle mineral bitterness on the finish. Hints of vanilla pop up in the fade. Nice pint.

Tap@MBCC 2021, Copenhagen - black with a tan head. Roasted and sweet malty, chocolate, coconut, caramel, full body, sweet lacto, vanilla and bourbon soaked malty close. Lovely.

Orange, peach, biscuit malt, pine, and grapefruit peel aroma. Cloudy pale yellow with moderate white head. Moderately sweet orange, peach, tangerine, creamy biscuit malt, and moderately bitter grapefruit peel flavor. Nice body and balance.

Can. Pours a cloudy orange gold with a white head that dissipates to the edges. Aroma has bitter citrus with a bit of peach, dank grass and a bit of onion in the finish. Flavor has dank and bitter citrus with a decent amount of onion and a bit of sweet grains backing.

It is what they aimed for it to be. Very light lager, with a moderate corn sweet streak backed up by notes of white bread, grass, and a hard-to-describe fruitiness underneath. Texture is perfect, but so many better craft macro-style lagers are available these days.

All-galaxy IPA offers a good bit of orange slices, citrus zest, peach, and pine, with a mineral bitterness in the middle and a lingering citrus pith finish. No malt presence whatsoever, so the galaxies don’t really have any accent; pretty much a one-note pint.
