Inspired by the Wiltshire landscape surrounding us, we work towards being the most sustainable brewery that we can be. Most importantly, when we began and with the right tools in our hands, we knew that we could create a mighty fine pint. A small team then set about with a vision for handcrafting ales from plough to pint. Using barley from our fields and chalk-filtered water from our own source, we’re bigger and bolder than we were then, but with the same knowledge that nothing quite beats the taste of a decidedly good pint after a long day.

Cask handpull at The County Hotel, JDW, Ashford. Wow, looking at the reviews of this beer so far, I really don’t know what to make of it. Poured a hazy russet and I must admit I was in two minds as to whether to give it back to the barman as the end of the barrel (well it was a ’Spoons god knows what they do with the beers in cellar and he had no idea when the Oakham White Dwarf was coming on, how can he do that to one of that beers biggest fans in the world??). Some fruit on aroma. Raspberry, bit of diacetyl. Really some hop on finish. Some butter/diacetyl in mouth. Classic good condition. Really not sure if this should taste like this. Didn’t get any of the smoke that previous raters did. It reminds me of a fruit pie but not entirely in a good way. It’s pretty terrible to be honest but with hints of greatness. Had to leave a half of a pint.

Cask @ Bon Accord. Dark golden colour, off-white head. Nose is bready, with citrus. Flavour is smooth, malty and fruity.Cookie malts. Slightly bitter finish. Easy drinkable.

[Cask at The Retreat, Reading] Amber, small white head. Grassy aroma. Smooth, soft mouthfeel. Soft malts and sweetish honey. There’s little bitterness here, but it’s still surprisingly refreshing and moreish, possibly due to a slight dryness in the finish. A decent session beer.

Cask@HBF2009. Clear amber color, small white head. Caramelly malty aroma, some nutty hops. Woody-nutty, caramelly, weak finish. Light nutty aftertaste.

Cask@Black Door, Helsinki. Amber colour, mediumsized beige head. Aroma is nutty, berryish and some slight notes of wood. Flavour is fruity, hoppy and quite wooden. Quite mouthdrying. Surprisingly good for being only 3.8%.

(Cask at Pullman, Helsinki, on 2009-05-15) Pale amber and almost clear. Hardly any head. Mild aroma of malts and toffee. Medium bodied and dry palate with little bit of carbonation. Malts, toffee, light sweetness, bitterness, light roastedeness and molasses in taste. Malts and bitterness in aftertaste.

Cask@Pullman Bar, Helsinki. Golden colour, mediumsized off-white colour. Aroma is fruits, hops, some slight yeast and quite wooden. Flavour is fruits, wooden, mild yeastyness as well as some smoooth grassyness lurking. As it warms up it gets some caramelly notes as well.

(Cask at Kitty’s, Helsinki, on 2009-05-02) Golden and almost clear. Medium sized, white and long lasting head. Sweet and fruity aroma. Medium bodied and bit dry palate with little carbonation. Malts, sweetness, toffee, grass, fruitiness and bitterness, Malty and lightly bitter aftertaste. Not a dull tasting beer at all.

Cask at the Penny Black, JDW, Bicester, Oxon 24-04-09 Pours a slightly murky reddy brown colour and if I’m being honest this was one of the few ever so slightly negative points. The aroma was smoky and actually quite sausage like I ended up thinking this could be a little cousin of Scherlenka, it was quite obviously not in the full-on smoked sausage category of that great beer, but it was very distinctive in its own right. The taste was more fruity than smoked sausage, I’m not sure that I’ve come across the Cilea hop very much but maybe it was adding something here, there was a light hoppiness. Lovely Mild. Cask @ Market Porter, Borough SE1. Pours a slightly hazy golden color with a small white head. Has a fruity malty aroma with some hints of hops. Fruity malty hoppy flavor with some hints of caramel. Has a sweetish fruity malty caramel finish with some hoppy hints in the aftertaste.
