Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.

In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.

Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.

A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

750ml bottle split. Hazy, murky orange-tan. Lemony and tart, true to style. Exceptionally balanced, with a soft malt bakcbone. Steady bitterness. Dry peppery tones. Delicate and well executed.

33cl bottle I picked up at Franklins. Pours a hazy, orange, brown with a thin, creamy, off white head. Nose is heavy on the herbs, lightly spicy, yeasty, candy sugar, a little band aid, wet grass. Flavor is sweet, herbal, medicinal, grassy, a little malt. The flavor is just herbs. Herbs plus herbs. Finish is medium bodied with a lingering medicinal note. People may very well enjoy this, but it’s not for me.

Cask at Max’s. Hazy golden color, small white head. Aroma of subtle citrus. Taste has fresh fruit, malt, light spice. It must be challenging to brew a beer with an acidic fruit, kudos to Brian for making it work.

Cask. Hazy light chestnut color, small off white head. Subtle aroma of rucola and bitter cocoa. Taste is smooth, cocoa, coffee, slightly acidic. Nice.

Bottle. Amber beer with a big cream colored head. Spice and yeast aroma with light malt and light summer fruit. Malt and summer fruit flavor with yeast and light spice. Medium bodied. Spice and malt lingers with yeast and light sumemr fruit.

A very good American saison. Stateside is a light orange beer with big frothy white head. It has a very professional, tattoo art-inspired label. The aroma is fruity with some funk and spice. I smell peppercorns, grapes, lemons, sweet melon and fresh grain. The funk is light, though definitely present. It tastes light to medium dry with good bitterness and funk. The flavor is a bit rounder than the aroma, but it could stand to be drier. I’m having a good time drinking this beer. It’s refreshing and full-flavored. The hop choice is interesting without getting in the way of the style. This was a happy surprise.

I FINALLY got to try a Stillwater beer thanks to ryan at the RBSG Grand Tasting. Pours a hazy peach color with a medium head. Fruity aroma with peach, pear, banana and a bit of spice. The taste is banana, peach, a peppery spicy note and a mildy hoppy finish. Medium bodied. Quite a nice beer.

Bottle thanks to someone at Sourfest. Pours with a fading tan head and a hazed golden body. Aroma is very grainy and dry, light herbs. Taste is bitter, herbal, candi sugar and dry. Fizzy and dry mouthfeel. Good Saison.

@PilsnerPeters-750ml bottle-pours a dissipating white head and yellow color. Aroma is lemon/tangerine, yeast, spice-coriander. Taste is lemon/tangerine, yeast, spice-coriander, bready-light malt.

22nd May 2010. ChrisOs ’Blue Ridge Mountains Of Virginia’ tasting! Hazy gold beer. Good frothy white head. Light dry palate. Nice tangy fruit - a little orange and some dried fruit, noticeably apricots. Very slightly sour. A little soft and dry in the finish. Has a little hop bitterness in the aftertaste.
