In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.
Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.
A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

Location: Bottle at Max and Andy's Fantasy Tasting, 5/1/10
Aroma: The nose has some notes of grain/yeast, earth, and some citrus too
Appearance: It pours into the glass a hazy golden-orange color
Flavor: The flavor is citrusy, some sweetness, and a good hoppiness to it as well
Palate: Relatively full bodied, with a nice feel to it, and a dry finish
Overall Impression: This was a very solid saison overall. A beer I enjoyed drinking, and something I would drink again. It is kind of funny that I had to move away from MD before I tried this one, but hey, it works that way sometimes.

Bottle shared with the Chicago crew, thanks to Kan! Poured a hazy light orange with a white head that lasts and laces a bit. Aroma was light with mainly floral and citrus notes with a bit of underlying honey, brett and spice. There is more brett funkiness on the tongue with floral and citrus notes and a decent amount of spice. A good saison but not great for me.

This shit it da bomb. Beautiful looking beer with a thick head that fades slowly and leaves a nice lacing behind it. I think this was batch 2, not sure though. The base saison is on the money, slightly biscuit sweet with nuanced fruitiness combined with a nice hop fruitiness (citra I believe). Doughy yeastiness throughout the beer. Great thick mouthfeel that goes down easy with the accompanying hops easing of pressure on the aftertaste. I could have drank this for hours. I am only hesitant to give it even a higher score until I can sit down with a whole bottle to myself. This was shared by Paul, thanks Paul.

On cask at Max’s in Baltimore. Pours a hazy, translucent copper with a very creamy, eggshell head. Aroma is malty, fruity, perfume, a little grass. Flavor is malty, crisp, grassy, a little astringent, lightly medicinal, sweet, lemon peel, a little anise. Full bodied, sweet finish. Might be the best Biere de Garde I’ve ever head.

Courtesy of SuzyGreenberg. Pours hazy deep gold with white head. The aroma is apple fruity, pear fruity, then spicy and a bit tart here and there. The taste has apples to near pear sweetness and then it gets a bit spicy to grainy to tart into the finish.
