Description
Last beer was released in July 2021 and common consensus is that this is the year the brewery should be set as closed.

Do note that due to the nature of the beers produced both BrewDog and other online retailers continued to sell the beers for many years after the closure.

Dedicated to exploring and pushing the boundaries of what is possible with fermentation, we are on a quest to redefine Wild and Sour beers, forever. With a purpose-built facility where craft and nature find harmony, we utilise wild yeasts and microbes from our environment and ingredients sourced from all around the world.

Draught @ IndeWildeman. Pale yellow, small white head. Smell and taste lightly malts, decently sour, lightly citrus peel but in a good way. Nice.

'Wild' ale by BrewDog Overworks - a separate production site owned by BrewDog designed to experiment with wild and mixed fermentation, set up at another location from the main brewery, in order to avoid infections with wild yeasts there (compare with Bruery's Terreux project). Draft at Wildeman, thanks Craftmember for sharing. Creamy, regularly shaped, lacing, dissipating head on a misty straw blonde beer with ochre-ish hue. Aroma teeming with a strong sulfuric stench (rotting egg, sewer water and rotting cabbage), overpowering more flattering notes of unripe yellow plum, green banana, lime, gherkins, grass, peach. Crisp sour onset, gooseberry and unripe nectarine, lime- and gherkin-like side aspects, medium fizz, wheaty - soapy middle with breadiness thrown in, dried by the sourness; lingering gooseberry sourness with a light grassy hop bitterish note, but when that sulfuric stench returns retronasally, the enjoyment is over. The taste as such is alright, but the extreme sulfuricness in the nose really put me off - BrewDog does great things, but sour and wild ales very clearly are not something they should venture in (yet?). Feels like a case of self-overestimation to me.

On tap at In de Wildeman, CB'18. Hazy golden colour, white head. Aroma of some dirty sourness, wet socks, cardboard, lemon, malts. Flavour is malty, wet socks, light sour, light metallic, not great tbh. Light bodied.

Keg at BD Bingoham, pre CCIV, 23/06/18. Lightly hazed yellow with a decent off white cap that dissipates edgeward. Nose is pissy citric peel, toasted grains, wood must, funk, green berry skins. Taste comprises big lemon sherbets, prickly cacactus, herbal notes, light perfume, grass. Medium bodied, spritzy carbonation, semi drying close with a light puckering rasp. Decent.

Keg at BD Bingoham, pre CCIV, 23/06/18. Hazed reddish orange with a well presented off white head. Nose is funky berry fruits, strawberry jam, funk, grains, damp hay. Taste comprises strawberry pips, damp wood, grassy, light acidic wash, tangy berry fruits, wet dish cloth, grains. Medium bodied, fine carbonation, semi drying close. Decent.

Keg at BD Bingoham, pre CCIV, 23/06/18. Hazed reddish orange with a decent light crimson cap. Nose is tangy red berries, funk, grains, wood must, red apple core. Taste comprises raspberry pips, red berry sours, barnyard tang, grass, light acidic squeeze. Medium bodied, fine carbonation, semi drying close spiked with a mellow puckering climax paired with balanced acidity. Decent.

Keg at BrewDog Leicester. Golden and hazy with a ring of white head. Sour kumquat peel aroma with notes of mango, cider vinegar and a vegetal note. Very tart taste, almost a touch acrid in my opinion, with a lingering sourness in the back of the throat through to the long finish. More kumquat and sour pineapple in the aftertaste. Medium carbonation. Really well put together.
