The Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference.These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

Good cherry infusion, sour cherry. Tangy sour cherry vibe. Pretty nice balance. Some sharp sourness at the finish. Pours pink with good head and lacing. Tap at Snally.

Citrus and lemon. Pours golden hazy with good head and lacing. Tangy finish. Some whiskey, but well integrated. Nice stuff. Tap at snally.

On tap at GABF. Pours a hazy ruby orange with small off white head. The aroma is berry, cherry skin, floral, vanilla. Slick body, similar flavors to nose, light tartness, very nice.

Bottle shared at Moor Beer Vaults - Bermondsey. Pours very slightly hazed orange-gold, no head. Great funk, notes of pale wood, lemon, grass, subtle salty kick. Light to medium bodied with very delicate carbonation. Dry finish, a little salt and vinegar, old wood, grass, relaxed acidity. Outstanding.

375ml bottle pours a dark orange, hazy, no head, plenty of carb. Nose is nice, rings very true, lemon rind, medicine cabinet, some horsey funk, neutral oak. The brandy is there, cognac too. Flavor is very authentic, lemon and orange and grapefruit but all rind... no juice. Buttery oak follows, natural wine, brandy, grappa. Finishes long, medium acid and dry on the lips and teeth.
