Making craft beer is a time consuming but exciting process, which requires knowledge, passion, care and creativity. Everything is based on a constant research and selection of quality raw materials, then the brewers decide which beer will be produced in terms of style, taste, colour, abv, etc. After the recipe is designed, the brewing process can start. Malt is milled and it’s mixed with water in a process called “mash”. Next step is “lautering” and then “boiling”. Afterwards wort is cooled and moved to fermentation tanks where yeast is added. After 4-6 weeks beer is ready to be kegged or bottled. Every single process is under brewers control, supported by our chemical analysis laboratory. Currently our brewery can produce more than 4000 litres per day.

2009-03-21, nitro-draught at the brewpub, 6-3-4-2-10=25
Black color; creamy head. Mixed aroma of roasted malt and chocolate. Lean body; there is some chocolate flavor, but overall it’s very watery, with light roasted malt, but otherwise empty. Simple final. Disappointing.

Black color; brown creamy head. Nice roasted malt aroma, coffee. Light body, nice roasted malt and a hint of smoke.

Light amber color, creamy head. Nice malt and caramel nose. Very good soft body, malty; caramel; a bit too yeasty.
As all the other beers, it's correctly bitter (sometimes even strong bitterness), but not enough aromatic.

2014-02-06, draught at the pub, via Golgi, 8-4-8-4-17=41
Pale blond color, just hazy, with generous rocky head. Great noble hops, powerful but elegant grassy character, with some hidden crispy malts.
Excellent. This is serious stuff.

Blond. Head. Very nice hop aroma, Hallertau? Good malt flavor, round, although just a bit crispy, and with some cereals; medium-strong bitterness; there are some cereals and grass in the end, but I think it could be a bit more aromatic.
2003-10-03, draught at the brewpub, via Adelchi, 5-4-6-4-12=31
Pale yellow color. Light and dry, bitter enough and lightly hoppy. A reasonable pilsner.
