Batch 1, 2014 bottle, drunk 11/28/15.
Good clarity in this apricot colored golden, light amber beer. White head atop is fairly well retained.
Smells like, cardboard! Some bourbon spiciness, sharp, grainy alcohol and no saison character. Peach, caramel, heavy white pepper. Not saison-like.
Mild bourbon to begin, with heavy acidity and alcohol. Grainy, dry and very unbalanced. Booze and oxidation, nothing to say nicely. It was fridged but is just way way too old even after 2 years

Retired beer from Clark. Split 18 ways. Bottle 120 of 85 in a shot glass. Looks like a watered down orange soda. burnt orange, 3 finger head...very dense. Herbal with a floral aroma, clove, some herbs spread around in the nose with honey and faint tropical fruit. Decent mouthfeel, not pushing any boundaries with a sweet finish. up front, saison yeast, really almost no bourbon or barrel character at all. Citrus, honey, yeast, kiwi. a little oatmeal.

They aren’t always terribly forthcoming with information about their beers, at the brewery. The bottles usually have a nice blurb on them, but their draught lists have generally one quick sentence, "Still ale with chocolate", "Sour ale dry-hopped", etc....Pretty stupid, if you ask me, if you’re going to put as much time in to the beer, that they do, to not have plenty of information about it. So I asked the bartender, who quickly deferred to the other bartender, who just said, Oh it has cacao nibs in the barrel. With further prodding, I was told that entropy was the base beer (it’s bottled in the entropy-style bottles).
Anywho, it pours a clear, light mahogany with cola tints and a beige head that rapidly fizzles to nothing.
Chocolate and....more chocolate in the nose. It’s enjoyable, at least, with a nutty edge to it. Cola notes, a good amount of prune character, some vanilla and surprisingly little alcohol come through. It takes quite a while for much more to emerge, being rather dominated by the chocolate character.
The flavor is significantly more complex, and less given over to the cacao character. Toffee, very light coffee hints, raisins, prunes and such. Indeed flat, but with a good attenuation leaving the beer actually manageable in this condition. Some esters and alcohol help dry things out as well. Good richness to the malt, with a chewy texture. It’s quite soft and comforting on the palate.
I never really see the need for this much alcohol in a beer, but when it’s relatively well-concealed, as it is here, I can tolerate it. Some interesting flavors, for sure, and a unique beer, but I’d like a little more Belgian character or something along those lines. Just seems all malt and cacao-driven.

Very hazy, deep bronze-golden liquid shows a small, quickly diminishing white head.
Fresh, toasted oak is immediately apparent in the nose, combining with a melange of bacteria and yeast funk. More in the vein of a lambic nose than your typical American sour, though not nearly the depth or intensity, not that that’s necessarily a bad thing. Vanilla, stonefruits, baked bread, hay and lots of funk; it reminds me a lot of the oaked sours Allagash often puts out. No alcohol nor flaw to the nose.
Low carbonation, but fairly tight, translate to a slick, watery, not quite creamy texture. Some definite sharpness from the bacteria-derived acids, with a strong sourness, light wood accents contributing additional dryness, and a toasted oak flavor that is easy to pick up upon but isnt overdone. Some fruitiness emerges with warming ad there’s some more lighthearted brett character, as well. Good stuff. They were only pouring 6 ounces max, so I’d like to get another sample to shore up my review, but as it stands, seems a bit rough around the edges, with some slight texture/carbonation problems and maybe just a bit too much wood and oak notes.

Moderately hazy, perhaps lightly cloudy golden beer is topped by a small white head showing moderate retention.
Big fruity nose showcases both light citrus, tropical fruit and a touch of earthiness from what seems to be Mosaic. The lacto notes complement this pretty well, not being too heavy nor dominant. Lots of fun, funky, fruity, playful notes and a touch of honey and bread dough, as well, to gently balance. No alcohol or flaws.
Lactic acid and wheat dry the palate out, but there’s ample sweet malt to balance and a chewy texture and tight carbonation. Lime, guava, pineapple, meyer lemon and such all come and go with a lactic finish that is very tart and clears the palate nicely. Very enjoyable, straightforward berliner with an added strong fruitiness from the hops.

Bottled. A hazy amber beer with a beige head. The aroma has notes of malt and caramel. The flavor is sweet with notes of malt and straw, leading to a bitter finish.

75 cl bottle. Pours hazy orange with a small white head. Aroma is fruity, light wineous. Fruity, light wineous. Smooth fruity. Crisp hoppy. Lingering fruity. Smooth fruity lasting finish.

Bottle - Chocolate and dark fruit with nice cocoa. Jet brown with a light brown head. Sweet chocolate and a bit of booze with a long finish. Hot but nice.

750mL bottle, pours black with a small tan head. Aroma reveals notes of licorice upfront, followed by roasted malt and cocoa. Flavour is less licorice dominated but still has it, with some roast further back. A bit confused but it works well enough. Solid.

750 ml bottle I purchased at Kappy’s. Dear god, I lost track of this one, been sitting over a year now. Darker brown in color with almost no head. Aroma is a bit different: earthy malts, caramel, mild raspberries and just a hint of yeast.

Flavor comes off as sweet with the lightest sour note in the back of the sip. The "Berry" comes off more sour or funky rather then tart. Caramel and earthy grain with the yeast strain does make this very interesting. Sugar is notable. Almost to much malt and honestly I don’t know if this sitting helped or hurt it. Perhaps hurt it, hard to know.
